These are absolutely incredible!!!! (see my notes)

6 Tablespoons melted butter
3 large eggs
1/4 Cup Whipping Cream 35%
1/2 Cup sweetener, Splenda bulk (I used maple flavored whey low)
1 Tablespoon flavoring, maple (didn't use - didn't have)
1 Tablespoon vanilla extract
2 Teaspoons ground cinnamon
1 Teaspoon ground nutmeg (I put in a little extra)
3/4 Teaspoon baking powder
3/4 Teaspoon baking soda
1 Cup Flax Seed Meal
1/4 Cup soy flour, Bob's Red Mill
4 Ounces chopped walnuts -- optional (darn I forgot those!)
I threw in a handful of sunflower seeds and golden flax seeds!


Preheat oven to 375F.

Beat first 3 ingredients together, then add Splenda, maple and vanilla. Mix the cinnamon and remaining ingredients and add to above.

Put into 12 paper cupcake liners in a muffin tin, or panspray/oil, and bake for about 15-20 minutes. (mine were done in 15)

(Can double the recipe, and get about 18-20 good size muffins, filling the muffin cups about 3/4 full. Can fill the muffin tins to the top and get about 9 larger muffins. These are really good and have lots of fiber. About 4 carbs per muffin but over 3 carbs fiber. Black walnuts, if you can get them, list 4 grams carbs but 2 grams fiber for the 4 oz....
Other flavorings to try: instead of maple flavor - use banana or pineapple. Unsweetened coconut also tastes great.

These freeze well.

Can also be made in the microwave. In a 1000 watt oven, 12 muffins take about 2 mins. and 10 seconds.)

OK guys. I ran this through my MasterCook software. With the Whey Low, almond meal instead of soy flour and added nuts, it comes to 4 carbs per. Actually, it's 4 carbs even without the nuts (I put in 1/4 cup). With soy flour instead of almond meal, it's still 4 carbs. With Splenda instead of Whey Low it's 3 carbs per.

I just made them. I used the Whey Low, the almond meal in place of soy flour, toasted almond slices instead of walnuts, coconut extract and about 3 T of unsweetened coconut flakes. That gets them up to 5 carbs. Very respectable for a dessert and something that's REALLY healthy, too!

The taste is great! And another great thing is they don't stick to the cupcake paper like many LC recipes do!

I notice they didn't stick to Penny. Fell right out of the foil.

Of course, in Dinah's Diner, I never have all the ingredients I need. Seems something is always missing. Well last night I didn't have any baking soda. Couldn't find it anywhere. Who in the world would steal Baking Soda, I have no idea, but anyway.... I used Rachel & George's suggestion of Club Soda, and added about 1/8 cup extra flour, and they came out great!

My own twist on tweaking would be to add more Cinamon. They smelled really cinnamony, but didn't taste real strong.

Your idea of Coconut is another good one! I'll try that as soon as my Baking Soda shows up! LOL

Penny, Does your Master Cook program have nutrition info on Flax Seed Meal? Mine has is for Flax Seed, but not meal. Or do you at least have the info? It only took about 2/3 cup of seed to make a cup of meal, but that is just an estimate. I've been grinding my own, so don't have a package of meal to get the info from. I'd like to know the counts.

Well, I made these this morning. I don't care for nutmeg at all, so left it out, (funny Jenny doubled hers) and increased the cinnamon to 1 Tablespoon. I can't seem to leave a recipe alone these days. I used Zero Carb syrup instead of the Splenda Granular. I also substituted Wheat Protien Isloate for half the soy. Dinah, they still could use more cinnamon even, in my opinion.
They were OK, tho not great. But I think I used some flax meal which may be getting too old. I will try them again one of these days, and use fresh meal, and more cinnamon. Don't think I used quite enough sweetener either. 1/2 cup is a tricky one with Zero Carb. But they don't need much more.

I'm thinking chocolate ones some time. Hmmm.....

I really liked them! Try them again Billie. My recipe calculator doesn't have the flax meal either. I meant to look on my package but I forgot and used the last of it.

I will try them again. I think it mainly was that the flax was getting old, and I needed a little more sweetener (not much, but a little).
I've got to try them as chocolate.

I used the soy flour -couldn't even tell it was in there.

I added tonight some phyllum husks - more fiber; the nuts; just made them with 1/2 the sweetener - and they are just as good. Next time I might leave out the sweetner all together and see how they taste. I'm not a big sweets person anyway. I put some unsweetened coconut flake in them this time too - the original recipe suggested that - also after I filled the cups I sprinkle a few sunflower seeds on top - I'm addicted to these and since I've been eating 2 a day - I've lost more weight - will post update on weight on MONDAY!!!

LOVE THAT FIBER!

Yep, fiber is GREAT!

Crazy, I think it's tough to bake with zero carb Splenda syrup, as it provides no bulk whatsoever (it's better in things that don't need the bulk, like cheesecake or smoothies). So, by definition, they will come out smaller, more compact, less airy.

As for the flax meal, I buy golden flax seed meal, already ground. It pretty much tastes the same but has a better color for baking LOL!. As for nutritional information, I always add to the ingredient list in the Master Cook program. It now has all the info for Whey Low and Jena-Marie's cake blend and so on and so on.

Jena's ground golden flaxseed meal has, per 100 gram serving (3 1/2 ounces) 450 calories (whoa! no wonder we like this stuff), 41 grams total fat; 28 grams carbs; 28 grams fiver 20 grams protein.

Bob's Red Mill brand lists a serving as 13 grams (2 Tablespoons) with 60 calories, 4.5 grams fat; 4 grams carbs, 4 grams fiber and 3 grams protein.

Grrrr...I get so aggravated when this happens. I had typed up a post, clicked submit, and was taken to the login screen. I had ta've been logged in, or I wouldn't have had the reply screen. So it must'ave logged me out while I was typing. Anyway..........

Yes , I add to my Master Cook ingerediants list too. I have several things in there that weren't in it originally. But I didn't have any info for the flax meal.
And as for the Zero Carb, it really didn't adversely affect my muffins. They were about normal size, tho they were just a little heavy. Not too bad tho. I may try the Splenda next time. My muffins were 1 carb each according to my Master Cook (and estimated flax meal count), and would be 2 carbs with the Splenda the way I made them.
Seems like I had "said" something else too, but now I can't remember.

Made the muffins this morning for breakfast and they are FABULOUS!!! I added a tbsp. banana ext. and 1 tbsp. vanilla ext. a dash of nutmeg, and 1 & 1/2 tbsp. cinnamon. They are YUMMY!!! Thanks SO much for this recipe it is a KEEPER!!!!
I agree with you about the soy flour...I did not notice it at all!!!!

P.S. If you spray a little LOL SF whipped cream on top after they are cold it is pretty satisfying as a SNACK!!! It only FEELS LIKE you are being bad Twisted Evil Laughing

I liked the muffins and will make often , I will use more sweetner , I guess mine will be more like cup cakes than muffins. Have any of you read the book "The Gold Coast Cure " by Andrew Larson, M.D. & Ivy Ingram Larson ? It has alot of info on flax and Vitamins & minerals. I've learned alot. I have MS and Fibromyalgia plus being fat , so I need all the info on flax and natural foods I can get. Hope this helps someone today . Vicki
