I know this is technically "tetrazine" (SP?) but my wonderful Aunt Fran always called it caccitory..... It is delicious!!! I've LC-ed it from her recipe that has been in the family for decades. Hope you give it a try. It makes a LOT!

4 cups cooked spag. squash
8 oiunces canned mushrooms (or more)
8 ounces pimentos drained
3/4 cup onions
3/4 cup celery (opt)
3/4 cup bell peppers, any color
1 lb cooked chopped chicken (I prefer breast meat but you can use whatever)
2 cups cheddar cheese
8 ounces cream cheese
1 cup cream

cook squash and let cool.

Saute the veggies till tender-crisp in EVOO/butter mixture.

Mix cream cheese and cream or 1/2 and 1/2 and warm till melted, add about 1 cup of the cheese and melt.

Mix everything up in a big bowl and put in 9 x 13 baking dish. top with remaining cheese. Bake at about 325-350 till bubbly.

Serve with Full Fat/Full Calorie Chocolate Mint Ice Cream with anchovys spread over it. JUST KIDDING!!! Trying to see if you are paying attention. LOL

Should make 8 good sized portions at about 383 calories and 9.6 carbs each.

cooking the veggies

ready to bake

ready to eat!!!!

Sounds good!

Just for future reference on spelling Smile - tetrazzini (that's how my mom spelled it) and cacciatore (love those Italians!)

Wonder if my husband will eat this???

Something different to do with spaghetti squash! Sounds yummy -- and I love dishes that make a lot because then another night all I have to do is warm it up!
