Thanks Vicki! Yup these muffins are da bomb!
I made a double batch last night, and my baking soda mysteriously showed up! I was watching the Peter Jennings special, and was waiting on a commercial to check on the muffins, then I realized there weren't any commercials! and I almost burnt them! Almost, but not quite. I made some cream cheese with splenda and cinnamon to have with them.
These muffins are amazing. They are good hot, they are good cold, and they are good almost burnt!!!
Jenny, i was going to tell you too, my hubby said last night that those were the best muffins I had ever made! And my DS ate 3 before bed last night. I think I need to set up a "muffin station" at home cause it looks like I'll be making these a LOT!
I added a handfull of sliced almonds instead of the walnuts or sun flower seeds this time. VERY GOOD!!!! _________________ Dingie Dinah

I'm telling you - I'm addicted. My 13 mo. old likes them.
I am totally leaving out the sweetener next time - I used half last time - and they are still fantastic.
Since I've been eating these muffins and running an hour a day - I've lost 5 lbs. since Sunday! Will update my weight on Sunday morning.

Wow, Jenny, you must be so close to goal!!!! Are ya going to stop at 150 or keep on going???
I remade them last night with the Whey Low maple syrup and I liked them even better than the first batch. Hubby said he wanted to have three right then and there. I warned him about consuming too much flax! Banana extract sounds like a great idea. Would be yummy with macadamia nuts, too!

Penny - we must be on the same wave length. I bought macadamia nuts chopped up at Trader Joe's today - I love that place -everything is so reasonable. Got more unsweetened coconut - coconut and macadamia nuts!
Yes, I'm getting close - I'm 5'8" - we'll see what I look like - I can't go below 140 though - when I was about 135 I looked like a bobble head - I was too thin - I must be big boned. I'm about an 8 now -- depending on how the thing is made. My husband said - no more - he thinks I look great - and I feel great - but I wanted to be more toned - going to really concentrate next week on doing toning work with the weights. _________________ Jenny

Hi Jenny.....I made your muffins this morning. They are delicious!! I didnt have any nuts to put in them but still liked them. I cant wait to make them with nuts. Thanks for sharing the recipe!!
There are mornings when I'm just not in the mood for eggs and these muffins are perfect. This morning I had bacon and muffins...very yummy!

Thank you - I'm working really hard - and feeling better every day.
I'm making another batch today - without the sweetner and nuts (less carbs/calories) and adding more fiber - and cutting the flaxseed meal - I'll let you guys know how they turn out. _________________ Jenny

This morning I tried these muffins with cream cheese sweetened with wheylow powder sugar sub. and cinnamon. It was delicious! It totally feels like you are cheating, but you are not!!!! _________________ Happy lowcarbing!!

I made my 3rd batch today. I have 3 of my grandchildren here, and they love them.
I use about half cream & half fizzy water for the cream. I use 3 Tablespoons of cinnamon (no nutmeg, which I can't tolerate), and a couple of tablespoons of vanilla. Today I used a little more fizzy water, and increased the baking power to 1 teaspoon. I put half the batter in 6 cups, then added 2 Tablespoons of cocoa, 1 Tablespoon oil, and about a tablespoon more fizzy water in the other half. The chocolate ones rose up rose up more than the others, but wasn't quite chocolately enough for me, might be for some tho. Since I like the cinnamon ones fine, and we have them with eggs at breakfast, I may just stick to that mostly.

Bille - they are a regular with me - and they keep you regular! LOL
The ones without any sugar sub - were very "healthy" - I think they need the 1/2 sweetener. Fizzy water - that's an idea to cut the calories...I might try that. _________________ Jenny

Sorry to hear they had such an effect on you. They don't have that effect on me at all. I have eaten up to 3 a day, and they don't even necessarily keep me regular like they do Jenny. I'm down 2/10s of a pound. Don't know if it is the muffins or not. That isn't much, but I'll take it, and hope for more.
I meant to add psyllium husks to my last batch, but forgot. I'll try it next time. I can use all the extra fiber I can get. _________________ Billie

I think the losing is many things combined - two muffins - replace a meal (not a dessert for me) - that might be more fat and no fiber - so that is one good thing; running harder and more; drinking more water because it is do darn hot here (better today after big thunderstorm last night). _________________ Jenny

Hi all you WONDERFUL people!!!!!
I used 1 1/2 tbsp. banana ext. and 1 1/2 tbsp cinnamon and 1 tbsp. vanilla ext and they came out like a banana nut smelling muffin and they tasted great too with the banana(YUM!!!) I do use the 1/2c sugar and next time I will try the "fizzy water" trick. I also use my muffins as a meal but last time I doubled the batch and baked the same amount of muffins (12) and they almost look like an average size muffin. DEFINITELY A MEAL:)
