I must say, these are absolutely fantastic! I have made them twice, and double the recipe each time. Don't over cook them! This couldn't be any easier! Let me know what you think, and THANKS Miss PAULA!!!! You ROCK!



Magical Peanut Butter Cookies

Recipe Summary

Prep Time: 15 minutes
Cook Time: 12 minutes
Yield: 18 cookies

1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

I don't know the carb count. I guess it would depend on your brand of peanut butter. I used Kroger brand of "natural" peanut butter that comes in a 2 cup container. I doubled the recipe and used the whole thing. I'm looking at carb options peanut butter, and the whole container is 45 net carbs. I think the splenda is 24 in a cup, right? that would be 93 for the whole recipe, doubled and it makes a minimum of 24 cookies, so about 4 carbs each? does that sound about right?

And I should have mentioned that I did use parchment paper, and sprayed it with pam too.

Just be careful! these are addictive!!!

I have made these and they are soooo yummy! I wouldn't use the carb options peanut butter.... think they would come out too sweet.... Probably better with the natural peanut butter. (I have also heard of some people adding some cocoa powder to them) Mmmm.... Very Happy

These were so good! Thanks for sharing this recipe--can't wait to try adding some cocoa, too...

Instead of making the criss-crosses on top, I pressed a whole pecan on top of each, which worked out well.

Good Grief. I screwed up these cookies BIG TIME!! I don't know what I did wrong, except I used "natural" peanut butter, and it had seperated. I doubled the recipe, so I used a whole jar (16oz). I dumped it in my bowl, and added the eggs, and started mixing it up. Then I added the whey low and vanilla and mixed it up again.

They never did cook. They turned into a big gooey glob, which DH and I ate anyway! pretty good warm! LOL

I refridgerated the leftovers and tried again Saturday, thinking the chilled dough would do better. Nope! Still gooey and they all ran together.

Anyone have any idea what I did wrong? It's got to be the natural peanut butter and all the oil, don't ya think?

What peanut butter did you use before?

Did you mix the natural peanut butter up good before you tried to incorporate the other ingredients?

I used the carb-reduced Skippy the last time, but the time before that I used natural, and I DID incorporate the oil in it b4 I added the rest of the stuff. Maybe that's what did it. I know I'll try it again tho. They are too good! Was a waste of my precious Whey Low tho!!!

i just tried this recipe and was heading over here to post i was glad they were already here! Very Happy they rae AMAZING! here is a picture of mine........




Dinah i use natural PB too chunky style. i belive you may have Overmixed, sorry i wish i could be more help.

Splenda worked fine for me. I was thinking of trying stevia next time, but I don't know if that would work, since it brings no bulk to the mix...
