I made these for the first time today and only ate one--froze the rest for breakfasts through the week. They're good, though I think I'll double the Splenda next time for something sweeter. I used 1T diabetic maple syrup + 1T vanilla. I'd really like to put raisins, but that would be a no-no...
I wonder how these would be cut up as a bread pudding? *mmm* _________________ Amanda

You know, I take that back. They ARE sweet enough. Today I had 2 from the freezer and they seemed sweeter to me. Maybe fresh out of the oven I couldn't tell... anyway, people at work are getting used to my baking stuff from this website over the weekend and they were lined up outside my office to see what new creations I showed up with! These were definitely a hit!
My boss wants to try making them as pancakes, and someone else suggested adding shredded zucchini, and yet another said they'd like to try using garlic & onion powder instead of cinnamon & nutmeg for a dinner roll. These are certainly muffins that spark creativity! _________________ Amanda

Amanda,
I noticed that I didn't like them as well when I first tried them either. As you said the didn't seem as sweet right out of the oven. Anyway, I love them now. I eat 2 or 3 each day. My DH likes them, and my grandchildren do too. My daughter-in-law tried them, and said it is the first flax meal anything that she has liked. _________________ Billie

My husband LOVES them, and they didn't kick me out of ketosis! At least not yet... going to check tonight and make sure.

Has anyone tried grated apple for an apple/cinnamon muffin? I think I'll give it a try, as soon as I find flax seed meal. I've got a bunch of granny smith's, fresh off the tree, to use up. _________________ "Live each day and be done with it. You have done what you could"

Grated apple sounds good... but can we have apples? Stuffing sounds good, too--a cracked egg, some nuts & sausage, a little onion, a few berries... mmm!
Crazy--I have grown to love them much more as the days go by. I don't know what it was about right out of the oven, or the way they smelled I expected something a bit sweeter. Plus I used splenda instead of wheylow, so that might be a difference there. _________________ Amanda

Well bummer.... last night I showed only small ketosis and it has to be the muffins as they're the only thing different I'm eating. My husband is bummed big time cuz he knows I won't be making them on a regular basis. I'm thinking maybe if I stick to only one per day it might make a difference (I had 2) I think I'll stay off of them till I'm back in deep purple and then try one per day and see what happens. What are lipolysis testing strips?
Lipolysis testing strips (LTS) measure the ketones—the markers that can indicate that your body is in lipolysis and the secondary process of ketosis—in your urine. The strips will change pink or purple, depending upon how many ketones are there. The more ketones you excrete, and therefore the greater degree ketosis you are in, the darker the color. You don't have to use LTS, but doing so can be an extremely convenient aid to doing Atkins.
What is the right product to buy to test whether I am in lipolysis/ketosis and where can I get them?
Lipolysis testing strips (LTS)are available under the brand names of Lipostix, which are designed for people following a controlled carb weight loss program, or Ketostix, which are designed to warn of ketoacidosis in diabetics. However, both are quite serviceable as lipolysis testing strips. LTS are relatively inexpensive. They can be purchased in pharmacies and some natural food stores.

What shade of purple should my lipolysis testing strips be? Will they show different levels at different times of day?
Because every person's metabolism is different, the sticks turn different shades of purple or pink for different people. And, yes, results vary depending upon the time of the day, whether or not you exercise and what you last ate. It doesn't matter whether your strips turn a dark or light color. Some people never even get into ketosis, but still lose weight easily. So don't worry about the exact level of ketosis shown on your test strips; what is more important is how your clothes are fitting, what the scale says and how you feel.

Wow!!! These are absolutely amazing!! I made them with almond flour, banana extract, a splash of DaVinci vanilla syrup (was out of vanilla extract), some sliced almonds & a little unsweetened coconut. These were sooooooo delicious!!! Really made me look forward to breakfast! Thanks Jenny!
ps. Just made another batch! (I can't stop!!!!) This time with 2 Tbsp. Steeles Raspberry Jam (2 carbs), and a splash of DaVinci Raspberry Syrup and some pecans. Mmmmmmmmmmm _________________

I just love these muffins and so does my Honey! I made them when Jenny first shared the recipe and put one in his lunch each day. Then I switched back to oatmeal scones in his lunch(just for a change) and the scone kept returning each evening in the lunchbox. This is a sure sign that an item is not liked when it keeps returning. So I asked about that. He said he much prefered the muffins. I made some more. I like the raspberry idea too. Gonna try it. I still make & eat them all the time. I've tweked them different ways. I use them as bread with my eggs at breakfast.
Many use the for breakfast.
If you want to cut back a little on the sat fats, check my "tweek" for the butter & cream. Not sure if it is on the first or second page. It works out very well.
I actually add some oat fiber (not flour) & cut back on the soy or almond meal. More fiber!!!!!!! Which I can use. For some they already have too much fiber, but not for me.
You may find they are better after they've sat awhile. I find this, even tho I warm them for a few seconds in the microwave. I store them in the fridge. _________________ Billie

Thank you, crazywoman.
I made the first batch with Soy and used every thing but the Mayble flavoring (I didn't have it) It was very good and I really couldn't taste the soy.
The 2nd batch I used Almond flour instead of soy...and the only flavorings I used were 1 tablespoon of Vanilla, 1 1/2 tablespoon of coconut and I added 1/2 cup of shredded coconut (no sugar added) I really loved this.
The next batch I do will be blueberry....Then strawberry.
Great recipe and you can tweak it for about any kind of muffin you want.
