Cream cheese Peanut Butter muffins

8 oz cream cheese
1 egg
1/2 tsp sugar free Vanilla
4 packs of Splenda
4 tablespoons Peanut Butter

Soften cream cheese, beat all ingredients together. Divide into muffins, bake 350 degrees for 20 minutes.

This sounds great! Just a couple of questions...what type of peanut butter do you use and what is the total carb count for the recipe (or for one serving?). We adore peanut butter but we have completely eliminated it from our ongoing induction level intake since we haven't found a brand that is low enough for us to consider.

Cynthia,

I use a low carb peanut butter. I am out right now and I can't remember the name. It make me Skippy, it is part of the low carb options line.
I don't know the carb count because different peanut butter and even different cream cheese brands will have their own count.
And as for servings it depends on what size muffin pan you use. I make 6 using a medium size pan.
Is there a place that you can enter recipe information and they will do the carb count? I use FITDAY but you have to know the calories etc 1st.

No, that's ok. Thanks so much for the info and we'll go to our local health food store (they stock lots of LC stuff) to look for the peanut butter since none of the chain groceries that we use carry it. Have a great day!

These were sooo good!! I only had enough to make 6, which meant only 1 per person. Next time Im definitely making a lot more.

Question and a comment: Q; how does this bake into a muffin with all of these moist ingredients and no binder? It sounds like something I definately want to try. C; Skippy natural has a much much lower carb count than the other regular brands I've looked at

I make them in paper muffins cups, & cook until brown on top,& they come out perfect every time.They cook up kinda like cheesecake.Moist & delicious. Debbie
