"Mock" Garlic Mashed Potatoes
Prep Time: 15 minutes
Cook Time: 6 minutes
Yield: 4 servings
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter.
Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

This is my favorite comfort food! Sometimes I'll add extra sour cream, put it in a casserole, top it with cheese and bacon bits, and bake it till bubbly. Lot like twice baked taters!!!

| My husband and I started doing low-carb almost a year ago. Last October we had an early Christmas celebration with family members, some doing low-carb and some not. The entire meal was low-carb with almost all the recipes from Mr. Stella's book. The meal was a huge success and there were no "potatoe" leftovers at all! Even my brother, who works on a farm and has a huge appetite, loved them and raved about them to another brother. That was a huge compliment! Thanks for the wonderful support when it comes to holiday meals!! |

I had made rather plain mashed cauliflower before, but this recipe beats that by a mile. This was great with turkey or chicken dinners. I don't even miss the potatoes.

| i really was incredibly sceptical at first.....however i was really floored as to how fabulous this is....i have a friend who is allergic to white potatoes and who hasn't had white potatoes in years and she loved this and was amazed. In fact i was amazed myself they are incredible try them and thank you for sharing this! |

| I have to admit when I saw this recipe part of me went "eeewwww" but I got over myself and whipped up a batch to accompany the beefed up meatloaf. All I can say is, "Wow!" The taste was like the best mashed potatoes I ever had, but without the "heaviness" of real potatoes. Yum! Thanks, George! |

I too was quite skeptical about the recipe,how could this possibly even come close to mashed potatoes Don't knock it till you try it..who needs potatoes..this is wonderful!! I do add a little extra cream cheese..Thank you George Stella!!  |

| This is greatness!!! There are other recipes for cauliflour mashed potatoes that just taste like soggy cauliflour.This is awesome. I like to add fresh chopped bacon and chives to mine. |

I have to confess, I am doing a LOW carb plan, not a NO carb plan. Even still, I can't sit around and eat mashed potatoes!! lol.
I love this.. it works nicely when you don't want to eat mashed potatoes. This will be on my table for Christmas day.  |
