Hey y'all! Very Happy With the Holidays coming up and memories of home cooking, this LC comfort food is sure to please all your guest including the non Low Carbers! This recipe is my aunt Dinky's, so I can take no credit for it. Try it and let us know what you think, David Wink


Dinky's Low Carb Holiday Pumpkin Roll
5 EGGS
½ CUP SOY FLOUR
1 TEASPOON BAKING POWDER
½ TEASPOON VANILLA
1/3 CUP SPLENDA
½ CUP SPLENDA
POWDERED SPLENDA 9SPLENDA PLACED IN FOOD PROCESSOR FOR A MINUTE OR TWO))
3/4 CUP PUMPKIN
2 TEASPOONS PUMPKIN PIE SPICE

Cream Cheese Filling
1- 8 OZ. CREAM CHEESE
1 CUP SPLENDA
6 TABLE SPOONS BUTTER
1 TEASPOON VANILLA

let cream cheese soften and beat together for a filling in pumpkin roll.

1. Separate eggs, Allow egg whites and egg yolks to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour a 15x10x1-inch pan, set pan aside. Bakers Joy works fine.
In a small bowl stir together flour, baking powder and pumpkin pie spice, set aside.

2. In a medium mixing bowl beat egg yolks and vanilla with a electric mixer on high speed for 5 minutes or until thick and lemon colored. Gradually add the 1/3 cup Splenda, beating on high speed until sugar is almost dissolved, stir in pumpkin.

3. Thoroughly wash the beaters. In another bowl beat egg whites on medium speed until soft peaks form. Gradually add the ½ cup Splenda, beating until stiff peaks form. Fold egg yolk mixture into beaten egg whites. Sprinkle flour mixture over egg mixture, fold in gently just until combined. Spread batter evenly in the prepared pan.

4. Bake in a 375 degree oven for 12 to 15 minutes or until cake springs back when lightly touched. Immediately loosen edges of the cake from the pan and turn cake out onto a towel sprinkled with Splenda. Roll up the towel and the cake into a spiral starting from one of the cakes short sides. Cool on a wire rack. Unroll cake: remove towel. Spread cake with cream cheese filling to within 1 inch of edges. Roll the cake back up and cover and put in the fridge to cool.

Edited to add DebB's findings on subbing almond flour for the soy (for those who can't use soy):
I made this and used 1/2 cup of almond flour instead of the soy flour. It worked just fine!

Also - I didn't have a 15x10 inch jelly roll pan, mine was around 9x13 inches, so that's what I used. I just baked it a tad longer than your recipe called for.

TFS David, I will definitely try this for Thanksgiving and let you know how it went over. I told the family I wouldn't have a LC Holiday, but I didn't say anything about sneaking in a few LC recipes.

Hi David ~ Thanks for posting your Aunt's recipe!! I used to make this before, well - you know! Loading with all the 'no-nos'..

Here's my question. When Somersizing, we can't use either soy flour or nut flours, so baking with them is something real new to me. My dr. does not want me to use any soy, so that's out -- do you think I can use 1/2 cup of almond flour?

I know this may be difficult to answer if you haven't tried it. This was always one of my husband's favorite desserts - so I look forward to giving it a shot! *Ü*

DebB, I have never tried that but it is definitely worth a shot! If ya try it, let me know how it works out and if it is OK with you, we can add an amendum to the recipe for those SSers out there and thyroid patients (as I suspect is the case here we are talking about) But just looking at the statement "not to use nut flours, isn't Almond a nut and wouldn't that be a "nut flour"? Just curious as I have never really thought about that one before. Let me know if ya try it and how it turns out! Good Luck, David Wink

Well - Good Googa Mooga - I confused mySELF with my last post Crazy

Yes - While Somersizing, we can't use soy products (unless you're a vegetarian) or nuts on Level 1 (while you're losing). They can be incorporated once you're at goal though ... Birthday

But - I'm eating a few food groups differently now, as per instructions from my doctor. One thing I can now eat is nuts -- so baking with almond flour is new to me.

Yes - my doctor wants me to avoid soy because of my thyroid issues plus it being estrogenic.

I will try this with the almond flour and post back when I do. I'm so glad you shared this recipe!! (Printer's whirring) *Ü*

David, I can not believe you posted this recipe, I was just thinking about my Thanksgiving menu I posted and was thinking I sure do miss my pumpkin roll, maybe I can come up with a lc version and poof, there your recipe was. I will try this over the weekend, but I think I would like to use Almond Flour. Will let you know how it goes. Again, thanks for the recipe, you saved my some trial and error and gave me an addition to Thanksgiving dessert.

Dave I am glad you posted this recipe, just to let everyone know that is a great pumpkin roll. My sister called the other day just to see if I had made any that day, she wanted one. So anyone that is into the pumpkin roll should atleast give it a try. Also you can freeze it and it comes out fine. So make 2 at a time. Very Happy

I have had the pumpkin roll on the daily bases for about 3 weeks now. It really helps to keep my hubby on track with his diet, to have the treats that he can have. But tonight I was setting here and just got a craving for the cheesecake. We love it also. But who don't?

Thanks for posting the pumpkin roll I have been waiting to see it. I have been MIA for the last 4 days. Just too tired to sit in front of the computer. Working the weekend does that to me. I will definately be trying this before the week is out. Pumpkin happens to be one of my favorite things for baking with. Smells so good as it is baking.

David,that is sooo cool! To have someone else in the family that supports low carb lifestyle! I wish i had someone in my family that supports it too. However I'm a loner here..sometimes it is hard for me. I get no support at home.. Sad
They think i need more good carbs in my diet..but they are thinking of what they want,and not what is best for me.. No No

Three cheers for Auntie Very Happy I will have to try this recipe,for me! I have not tried George's Pumpkin Pound Cake yet,but I'm going to as soon as i can,as well as the Praline Pumpkin Pie,and the Cheesecake.. Laughing

Dinky, Made 2 this morning! One with soy flour and the other with almond flour. I give both a 9 and will be putting this recipe in my top 5 desserts! George, you should add this one to your collection cause it is almost as good as the cheesecake! Love Cathy, I see today, you made the pumpkin pound cake. Do this-take and make George's cream cheese frosting, spread it ALL on top of your pumpkin poundcake and it taste exactly (texture and all) like a carrot cake. I always add the frosting to mine everytime! Now go try that cheesecake Love Crazy Eyes Crazy Love girl!
