| well i said i got my pans to make the cheese cake. well sat eveing i got some lemons and cream cheese and forgot the ricotta cheese and sour cream so in the morning i will have to get the rest of the ingredents . i am thinking about making this tusday morning or i just might wait untill this weekend. i am off work this weekend. i will let you know how it turns out!! sue |

| okay- one question - does anyone cook with gas oven- how does that compare with electic oven on cooking the cheese cake? i have everything to make the cheesecake- i am taking everything over to my daughters father house and we are baking the cheesecake there this sat. sue |

| well oh my gosh!!! that was the richest cheesecake i have eaten!! my cheesecake came out good!!! i liked it alot. for me it was to rich to me but it was still good. i gave the neighbors a slice! took some some for my mom and dad . well lets say my cheesecake is allready gone. sue |

I just started doing a Cyclical Ketogenic Diet (CKD) which is basically consist of eating 65% fat, 30% protein and 5% carbs for 6 days and then doing a carbup or cheat day for the 7th day.
Anyways, i have been trying out cheesecake recipes that are low carb but still taste great. Thus far most of the recipes i have tried have been bland and boring.
I recently purchased George Stella's Livin' Low Carb book and this New York Ricotta Cheesecake was the first recipes i tried.
First, i want to say that this recipe was easy to make and easy to remember, thanks for keeping it simple! If there is one thing i hate about the many cookbooks i own, is that they often have long lists of ingredients and I hate buying ingredients that are seldom used except for one recipe.
Anyways, out of all the cheesecakes i have tried, this one has been the best! But, i found the secret to this cheesecake being in refrigerating for 48 hrs. I dont know why. But, it taste 10 times better eating it 2 days later. Im guessing that the refrigerator helps evaporate moisture and makes the cake creamier and thicker?
I also like to add 4 packets of Stevia to this recipe. It makes the cheesecake taste a little sweeter like Cheesecake Factory.

I made this the other day, Very Very good cheese cake.
I did how ever have to tweak it just a bit, one way was when i pureed the ricotta i mixed the ricotta and the cream together to make it really smooth like whip cream , and no vanilla added (had none , long story) but it turned out really good.
Was upset that someone in the family decided to tear a peice out and then eat the middle as well, ( not happy, but will make another 1 next month) |

| Well the first desert I tried of course was the Ricotta cheesecake. It was DELICIOUS!! Even my youngest granddaughter who does not like cheesecake said she liked this one. I want to try the Key lime cheesecake next week! |

I made this last night. 4 out of the 6 of us had a piece for dessert after lunch today. We all thought it was absolutely delicious!! I can't get my 5 & 9 year old boys to try anything new. They are very finicky.
My 9 year old is a sweet tooth. The meat part of the meals he loves, but the sides he will not touch. Broccoli w/cheese and sweet peas are the only veggies he'll eat. Sometimes he'll eat lettuce with Hidden Valley Ranch dressing, but not very often.
He's my challenge. He could use to lose some weight, plus he has sleeping and learning disorders. I really think sugar is one of the main culprits.
Well, anyway...the cheese cake was awesome!

I'd really like to try this recipe. Unfortunately I'm the only one here eating LC.
Has anyone tried making it as mini cheesecakes, using muffin cups?
If so, how should I adjust the times, temp?
Also, how well does the cheesecake freeze?

Sherana, I have a perfect solution for you to avoid waste and I am willing to help you! Make a whole cheesecake, cut you out a couple slices and then send the rest to me! If that idea doesn't sit well with ya then do what I do and slice each cheesecake with dental floss (I got that tip from someone here and it works great so you don't lose one precious piece of the dessert) put each slice in a sandwich zipper baggie and freeze. Frozen cheesecake is good at times when you are about to have a sugar craving breakdown too! Hope this helps and I'll keep my eye on the mail,

Well, I've mailed poundcake to N.Y. and Chilli to Texas, so it's not completely out of the question David .
But I must say that from reading your posts, you're definitely the LC Cheesecake expert. Maybe you should mail me a slice?
Seriously though, from the picture I'd have thought this cheesecake a little too creamy to go into a baggie very well. But until I can figure out a mini LC cheesecake, I'll give it a try.

there are some who make a cream cheese "muffin" (basically mini cheese cakes). It is a totally diffrent recipe, but you might be able to bake them the same tempt & length of time. They baked them at 350 for 20 minutes. Theirs made 12 regular sized "muffins". I have made those mini cheesecakes before, and I baked mine in the microwave. Hmmm I can't remember for how long now, but it seems like it was only a couple minutes, but I was using mini muffin pans. _________________ Billie

WOW!!
I made this cheescake for the first time last night and all I can say is WOW LOL Its great. I actually messed up and let my water bath go dry. When you have a 2 1/2 year old son running around that is hard NOT to do. LOL It still was about 2 inches high after it cooled. It was still very rich and creamy when I tried it a few min ago. Only ate about 1/2 a serving because it was so rich. Cant wait to get his books I got off of Ebay next week so I can try lots of new stuff!
