Just want to throw in here that if you are just finding this challenge or are lurking out there - feel free to join in. We are doing an extra bit of work to try and stay on track this month. And, if you've fallen off (hello - can you say "biscut"?) you are welcome to climb back on and keep going.
I am feeing WAY better than yesterday. Keeping my eye on the prize and putting one step in front of the other. Only way to get things done.
Todays Menu:
B - half grapefruit with splenda, canadian bacon
L - Spagetti Squash "Lasagna" (from my freezer, made way to big a batch)
D - Surprise! Gotta go shopping tonight. I have lamb shanks in fridge but they need to cook all day in the slow cooker and I was too worn out to prep 'em last night. So maybe pork chops, or turkey burgers, I was also thinking aobut George's shrimp scampi for sometime this week...
UPDATE: Got home late from work and shopping. We ordered chicken wings, celery blue, cheese dressing, strawberries with LC ice cream for desert.
Anyone have Easter plans? Anyone been celebrating Passover? We are not doing much this year, and no candy around the house thank goodness, but I do want to do some cooking this weekend. Just not a ham. I make ham at Christmas and I swear it took us a month to eat it all this year.
Heather - those bloody mary's sound pretty good. I hear you on what constitutes a regualr "cheat." It seems like you are doing really well. Yesterday I made low carb "chips" from a tortilla to go with my guacamole because I could not get that giant bag of chips out of my head from the weekend.
Jia - how'd the 'cake go? How are things going on the weekends? And by the way the rice and chickpeas - not great but the fact that you limited yourself to a taste and got right back at it the next day is really great. A lot of times we use a moment like that to just dive right into the carbs. Congrats on hanging in there.

Hi all, Doing great. Made some more PB cream cheese muffins this morning.I keep them on hand. I had a salad for lunch & then a muffin w/ whip cream. I`m having something w/ a boneless chicken breast tonight. Maybe i`ll make George`s cheesy chili chicken. Have a great day!!!!

Hi. I have been so busy. Had a big dinner party yesterday. I was too busy to make something for myslef so basically went almost hungry the whole day until dinner when i had lots of high protein food. Lots of meat and some creamed spinach. not too many veggies though. Made the cheese cake. I love it. Thats gonna be my favorite from now on.
You guys are so innovative with food. You inspire me so much. Before joining this, my breakfast used to be boiled eggs, luch salad with some meat and dinner same again. Now i am trying all these new things. Hey Heather i never even thought of eating broccoli for breakfast. But why not?? right???
You guys have a good day. I am gonna try to stay on track and see ya all later.

Hello everyone. I've been busy, busy! I've been staying on track with only a few slips. I've increased my veggie input and varieity, I think that's helping.
Congrats to everyone on their efforts and positive attitudes!
I need to plan a good Easter menu. I was going to make lamb but my husband informed me he doesn't care for lamb. Now, this is the guy I've lived with for 25 years! Go figure! |

Howdy Everyone!
I've been on the run today! Too much to do to little time.
B- yogurt with splenda, Fuze beverage
L- hotdogs with cheese, kohlrabi (all leftovers)
D- Chicken stew with mushrooms, LC choc cake with strawberries and LC ice cream
Water: 48
Vitamins: Yes, and yesterday too.
Changed my easter plans for dinner. Making lamb shanks, mashed celaric (sp?), potatoes for D, snap peas, cheesecake for me/brownies for him. Might make some deviled eggs too!

Hi Everybody,
I didn't get a chance to post yesterday but I think I had a good excuse-I WENT TO THE GYM! My darlin' ( Gary) bought me us a gym membership for Valentine's Day and we weren't very religious about going. This week we've gone Tues., Wed. and we are going again tonight. I hope we can keep it up. He has high BP so it's really good for him. Sometimes that's my only motivation to go. This easter we are going to my parents' house. My mom is fixing scalloped potatoes, ham, deviled eggs, and I am bringing baked beans. I told Gary he has to eat ALOT because I can't eat most of it.
B-leftover ribeye (can you tell I am not one of those people who thinks certain foods are not for breakfast?)
S-cheesecake w/4 med. strawberries
L- La Tortilla wrap w/ ham, lettuce, provolone, mayo and lots of lettuce
D-will be eggs and bacon
W-54 Oz.
Vitamin
Jia-any cheesecake left?

By the way Jen, thanks so much for posting this challenge. The longer I have gone without cheating the easier it has gotten. I think if I weren't in it I would have had crab rangoon, pizza and a chicken sandwich and fries from Burger King by now.

Hope you all don't mind company. This challenge is just what I need to keep me on the straight and narrow. As I wrote under the general discussion list, I am getting over the schock of my last physical last week. Now I found out that my cholesterol and triglycerides are high up there as well. Of course, the first thing the doctor said was to go back to low fat, high carb, but I know that is what got me in this mess. So....here I am. I am going to count today as day one. As committed as I have been in the past week, I have not been that great. But today, I am.
Breakfast - Eggs and Bacon
Iced Coffee with 1/2 and 1/2
Lunch - Chef Salad with 1/2 egg, small amount of ham and cheese and turkey (I bought it in a deli) and I brought some homemade turkey to supplement.
Dinner - not sure yet, but now I know I have to follow the program because I will post what I had tonight tomorrow.

Hi everyone!!! I have been doing great....still no cheating.
The PB cream cheese muffins are in the recipe section,I think under snacks.I make them every wk!!!! The recipe makes six,I make mine in muffin paper cups.Once you try them you`ll be hooked like me!!!! I eat mine w/ whip cream on top. Yummmmmmmm

Good morning. I'm still on track. Drinking all the water and eating the veggies is helping. I might weigh myself tomorrow.
We're going out tonight for our anniversary. I know what I'm going to order so I feel very good about the night.
Now off to the dentist. I have my first cavity in 20 years. |

I didn't see them. Are they in either of George's books? Could you point me in the right direction? I saw something called "Peanut Butter Cups" but they were made with whipped cream and chocolate ice pops. |

Hi Folks. No posting yesterday. Took a break from the computer to do 5 loads of laundry, furniture repairs, grocery/home repair shopping, a variety of other errands, and work on my almost completed new home office. Whew! I got tired reading that.
Anyway, yesterday's menu:
B -Protein smoothie
L - (out and about) chicken stirfry and 1/2 cup cooked rice, SF ice pop
D- leftover roast chicken thigh and wing, babaganosh with cucumber slices, 1.5 oz cheese, glass of white wine
Water: 48 oz
Vit: yes
So apparently this challenge is really a challenge for me. I resisted the noodles on the menu at lunch but when they brought the rice on the plate (usually its in a covered bowl on the side and I cannot see it) I could not say no. Likley culprit was 1) seeing it sitting there on the plate and 2) not eating enough for breakfast 30 not having any low carb snacks with me whne I was out shopping all day. I'll pay today with CRAVINGS.
Today's Menu (we don't eat at regular mealtimes on weekends so I may only eat two meals, plus snacks, or we might have an odd late night meal/snack and watch a movie)
B - 1/2 grapfruit with splenda, 3 sl Canadian bacon
S - eggplant dip, ww crackers
L/D - baked swordfish with arugula/tomato salsa, roasted portabella mushroom cap
S- 2 quesadilla with cheese, arugula tomato salsa
Water: lost track, maybe 40 oz?
Vit: yes
Its cold here for this time of year. We had some light sleet/snow overnight although it is all melted now. If it were warmer I'd be out there fixing and cleaning the grill! Hopefully next weekend will be warmer. Back to working on my office - catch ya later!!
