I stole this from Rachael Ray and tweaked it a bit.
4 boneless skinless chicken breasts
8 oz white button mushrooms
8 oz baby bella (crimini) or 1 big portabella sliced
4 oz exotic medley mushrooms (it has oyster, shitake and crimini)
really you can use any combo of mushrooms you want
2 or 3 cloves garlic, chopped fine
1 small shallot, shopped or sliced
t fresh thyme, chopped
1 1/2 c chicken stock
3T heavy cream
1T balsamic vingar
salt/pepper
olive oil
butter
parsley
Season the chicken breast with salt and pepper and cook in oil over medium high heat in a large skillet until browned on both sides. Remove from pan and cover with foil. Reduce to medium and melt 2T of butter. Add mushrooms and cook until browned. Add the garlic, shallot and thyme and cook until the shallot is softened. Season with salt and pepper. Add the chicken stock, cream and balsamic vingear. Raise the heat to high and let the sauce cook down until it is thick. Cut the chicken into pieces and add back to the sauce to reheat and finish cooking if needed and add the parsley. Probably serves 4 but in our house it only serves 2 LOL _________________

I edited the original post because I forgot something. I typed it from memory. oops!
This is an excellent recipe. I make it at least once a week. Sometimes I use fresh everything and sometimes I use pre-chopped garlic and sliced mushrooms. Whatever works for you. Also, this is good with pork chops but left whole at the end and sometimes I don't cut up the chicken either because I'm either too lazy or I want to have a whole breast as a meal. _________________ |
