OK y'all. Get ready for a special treat! I was posting my blackberry pie recipe and my wife was being a smarty britches and said why don't ya post your precious chili recipe. (which I won't give her Mamma ) So I now relinquish, for the first time ever, this 3 years straight "Pineville, West Virginia chili cook off" three time (2004, 2005 & 2006) "Best all around" category winning chili recipe with you! I have three trophies and 2 plaques for this recipe and also have an honorable mention in the who's who in the national cook off review in Huntington, WV. This recipe is the best I have and I promise you it will NOT disappoint. If you are a chili lover, try it once and I Gare On Tee you will be adding this to your recipe cards. This goes good at Super bowls, cozy winter nights, Fall evenings, or even in the summer time when you have a hankerin for something different. Try it and please let me know what you thought! Ingredients [/b]
4 pounds Ground Beef
1 Yellow Onion (diced)
1 Red Onion (diced)
2 Green Peppers (seeded and diced)
2 stalks Celery (cleaned and diced)
4 cloves Garlic (peeled and diced)
1 small Jalapeno Pepper (seeded and diced fine)
1 can stewed diced tomatoes (14 & 1/2 oz )
1 small can tomato sauce (6 oz)
1 small can tomato paste (6oz)
1/2 can of beer (drink the rest while you cook or may omit)
1 small can of green chilies (7 oz diced)
2 cups spring water
3 ozs chili powder
3 Tablespoons Cummin
1 Tablespoon garlic powder
1 Tablespoon black pepper
2 Bay Leaves
2 Tablespoons Hot sauce (I use Texas Pete or Tabasco)
3 Tablespoons unsweetened coco powder (I use Hershey's)
2 cans Soy beans drained (may omit if you desire no beans)
Directions
Place ground beef, onions, green peppers, celery, garlic and jalapeno pepper in pan and brown till beef is done. (Breaking beef into desired sized chunks as it cooks) Add remaining ingredients and stir thoroughly and reduce heat to low. Cook for 2-4 hours stirring occasionally to prevent sticking **NOTE**-the longer it cooks, the better it gets!
When serving, remove bay leaves, ladle into big bowls, add a dollop of shredded cheese and a spoon of sour cream along with a big piece of cuznliz's corn bread! http://stellastyle.com/community2/forum/viewtopic.php?t=5115
**Note on cornbread**-if concerned that this recipe uses buttermilk, substitute equal parts Hoods milk for the buttermilk and add 2 tablespoons of white vinegar for the same effect. _________________ Praise loudly, blame softly and treat each person you meet as a brother or sister!

oh....I will definitely have to try this...my man is a BIG chili lover and i think he has been wanting something a little different than our normal routine....the recipe sounds delicious! _________________ ~ Denise

David.... Hug your wife for me.. and probably after I taste this fine sounding recipe.. you need to hug, kiss and do the dishes for a year...lol
It really sounds wonderful and I will let you know how it comes out..

My mom came to visit and she and I made the chili today....It is yum yum good. My b/f added a little more hotness to it but I loved it just the way it was. It made so much we were running it in two pans

Thanks Sassy and I will as I work on them. I am working on one now that was considered undoable low carb wise but I am almost there and as soon as I have oit to where I want it, then I will post it and I Gare On Tee it will knock your carb loving socks off and STILL be legal,

Well David I thought I'd let ya know that we just finished the chili,and I am STUFFED!!!!It was awesome! I wasn't to sure,thought it would be to spicy,but it wasn't.Sprinkled it with alittle cheese and a dollop of sour cream,WOW!!!Yummo!!!!!!!!!!It is in my faves now,never could make a decent chili.Can't wait till my son comes home in October,he loves chili.
By the way he just got home yesterday at 2 pm,landed in Baltimore.I am so glad he is back in the USA.There were 100 of them coming back,went thru Germany,then stopped in Ireland,when they got off the plane he said people in the airport stood up and clapped,kinda cool he said.Also had time to run to a pub for a long needed beer.Know one would let the soldiers by anything(free)!!!But he did say he was so glad to be back,and hoped it would rain,so he could stand out in it.About 120 everyday where he was .
Sorry!!!I was ramblin,this has nothing to do with your wonderful chili,again David thanks for another great one!!!

Rodie, I am so glad you enjoyed it. Congrats to your son and tell him we are proud of him for his service to our Country! I hope he likes it as well as you all did. I am dissapointed there are no leftovers though

Nope, sorry Davie, I ain't gonna try it. I don't like green peppers (you ruined your chili there - MHO), don't like Jalapenos (another ruin), and don't like beer (ruin again). All of this is just my humble opinion of course. But nope, I wouldn't like it. Sorry!
Hmmm I've heard of puttin the cocoa in chili tho, but I never have. I may have to try that in mine some day. But mine I'll stick to thank you. By the way, mine is very similar to Dinah's.
Guess it's a good thing I wasn't a judge at those Chili cook offs. But I never would be a judge at one of those. Just tooooooo many chili recipes that I couldn't handle.
The little town up the highway from me has a big Chili cookoff every year. Never have been to it.
Davie, I wouldn't have posted this ifn I didn't think you could take it. Sure wouldn't want to make ya mad or hurt yur feelins. But we've talked before bout having different tastes.

I've lived in Saudi Arabia, so I understand the heat, and the wonderful feeling of getting back to the Great USA. (And I was a civilian, and wasn't really in harms way. Well at least no more than we are here in the big cities here in the states. That was several years ago.) _________________ Billie

Lord have mercy Billie, you know you couldn't hurt my feelings and I know you wouldn't! Lots of people do not like the green peppers or the jalapeno peppers as well as many who do not use alcohol. However on that note the beer and alcohol are not really noticeable at all. You could leave those three out and try it. I am also going to tell you for that perfect rich and dark chili try the cocoa powder as it is the secret that makes chili so good! (along with an extra shot of cummin imho) Take care and now I am going to sulk and pout ,

David, I would never have posted it if I had thought I would hurt your feelings (as you said you knew that).
When I leave those ingredients out, it is very much like the chili that I make (not counting the cocoa). I don't use the hot sauce either. I get plenty of heat for me with the chili pwd, plus I usually add my creole seasoning as part of the salt. I prefer my red pepper in pwd form rather than a hot sauce. Again, just my personal tastes.
Oh, I just now noticed the celery. That would have to go too. Celery in chili??? Not for me. Soooooo........ there goes your recipe.
I guess mine is closer to Dinah's.
Oh well, everyone has their own tastes when it comes to chili. But I will try that cocoa next time I make chili (or when I think of it when making it).
Now you can go sulk & pout some more. _________________ Billie

David,
I'm sorry we did have leftovers,and both my dh and myself ate them for lunch today.As far as your chili,I was alittle afraid it was going to be spicy,or to many peppers,ect in it,but actually it was not at all.The only thing I feel bad about is that I made 1/2 the recipe you gave,just in case we didn't like it.Oh well next time I definaltly will make the whole batch.Do you put it in containers or bags to freeze it?? I hate when I get ice crystals in my stuff.
