Dominique's Old Fashioned sugar cookies...

1 1/4 cups almond flour
1 cup Splenda
1 egg
1/2 teaspoon butter flavored extract
1 teaspoon vanilla extract
1/4 cup butter, softened
Preheat oven to 350 degrees.
Mix Almond flour with splenda, sifting until well mixed. In a separate bowl, lightly beat egg and then mix well with extracts and softened butter. Add to dry ingrediants and mix really well.
Form dough into 24 small balls an space evenly on 2 ungreased cookie sheets. Press moderatley to flatten to silver-dollar pancake size. If you choose, sprinkle with granulated splenda. Bake for approximately 8 minutes at 350. They will slide right off the sheet.
Cool 5 mins before eating. |

oh I may have to try these....been craving sugar cookiees lately..and chocolate chip....well just cookies in general but alas...will still have to give tem a try _________________ ~ Denise

| Ok I decided to be the guniea pig....and these are def worth making. I used homemade almond flour and not store bought so the texture was a tad grainy...like the almond flour pound cake but i didn't mind it. would probably be real nice with store bought almond flour. The cookie it's self was moist and not like sand....which is what I was afraid of....my only suggestion is not to sprinkle extra splenda on top....the half I did that to tasted bitter in my test batch. My oven is very strong and I have to take it down a notch usually but i followed everything and they came out perfect. Keep in mind they are not real flour cookies and I'd say for easy of the recipe and aquiring the ingredients.....this is a pretty darn good recipe and I highly recommend. BTW, didn't have butter extract...only used vanilla. hmmm.....I wonder what else I can make with this recipe. |

I do believe I'm going to try these today. I have some leftover chocolate in the freezer from making chocolate chips and I think I'll add them too. Know what I've been thinking ever since I decided to make these?
