Making 25 of these...I'd be the only one eating them in my household...how do you think they'd fare up in the freezer after being cooked and then nuked at a later date????

I never thought of shredding the cheese and mixing it in with the cream cheese- duh! I make a half sheet pan full whenever I make them- they take a little work and this way I have them on hand. I used a different recipe that called for pieces of cheese- which I discovered if you put the piece of cheese in first THEN the cream cheese on top- the cheese doens't melt out of the popper.
I think they reheat great- better in the oven than the microwave- but the micro is oK too. I find that if you get a few really hot ones- I put a little sour cream on before "popping" it in my mouth takes out a little of the heat.
I will be shredding that cheese from now on- such a simple solution!!!!!!!!! I think the charm of these is that they are 1 or 2 bites- so probably any small pepper would work fine.

I made 20 (40 halves) yesterday and now I only have about 12 left. How do you stop eating them? They are dangerously good.

oh man!!! i just made these for the first time. WHOO HOOO these are SOOO good! And I didn't have any bacon so I just left that out. and I used all cheddar, and only had 10 peppers so I halved the recipe

MAN these made me break a sweat as soon as I ate ONE!!!

if you like spicy, give this a try. next time i might add some onion powder too.

i was talking to my sister and told her i had made these (and ate all of them!) and she is going to the store to get the stuff to make them! She's lucky, she's 2 blocks from the grocery store! I'm 6 miles away!

I know she'll love them. She's a spicy kinda gal!

ya'll gotta try these. even without the bacon they are the bomb!

Dinah, these are the bomb! Addicting too. You must make them again when you have bacon. Yum, yum.

Here's a tip: if you don't like them too hot you can soak them in water for a few hours and it will reduce the heat a lot but will keep the flavor of the jalapeno. Add some salt to the water too and of course remove seeds and veins.

Gee, now I think I have to make some of these.

I use to make an appetizer for parties that were very similar to this recipe. I found it in a Mexican cookbook I bought in the 70's. Instead of fresh jalapenos, you use canned ones and remove the seeds. Fill with cream cheese, cheddar cheese and finely chopped onion. Pop in the oven until cheese melts. They were always a hit. I bet they would be good with bacon. You might have to cook the bacon a little before adding it since they don't have to cook very long. I will have to try this recipe. Donna

bumppppp

getting ready to put this in the oven. double batch!!!

i did it a little different. I had some crispy cooked bacon, so I put all this stuff in the food processor, chopping the bacon up in it.

couldn't be easier!!! I'll try to get a picture when I get them out of the oven.

chow!
