These are good in a salad, as an appetizer, or served as shrimp cocktails.

Pickled Shrimp

1 1/2 pounds shrimp, cooked & shelled
2 medium size onions
15 - 20 bay leaves
1 1/2 cups Perkey French Dressing (recipe follows)

Thinly slice the onion and separate into rings.

In a medium size bowl arrange alternating layers of shrimp, onion rings and bay leaves. Pour the dressing over the top and press down so the top layer is covered, too. Cover the bowl with plastic wrap and refrigerate for at least 24 hours so the flavors are well blended.

Perky French Dressing

1 teaspoon dry mustard (colman's)
1 teaspoon water
1 1/2 cup olive oil
2/3 cup vinegar
1 Tablespoon Worchestershire sauce
1 1/2 teaspoon salt
1 teaspoon sugar substitute
1 teaspoon paprika
1/4 teaspoon cayenne pepper

Mix the mustard in the water and let stand for 15 minutes. Combine all the ingredients in a jar. Cover tightly and shake well.

This also sounds good! How long will it keep once in the jar as I would like to make this ahead for some friends coming this weekend?

I am do picky about keeping leftovers and making ahead.....I am a buy the stuff go home make it and then eat it phobic about old food person...

I keep the dressing for up to about 2 weeks in the fridge. The shrimp I usually make a day in advance....leftovers usually get eaten up the next day after that and they are still good. Anything seafood older than that I always toss out.

Foxye, I mean to post and tell you I tried this! It was delicious and I didn't have to worry about left overs. I just couldn't stop eating them! I took some and skewered them with veggies on the grill while basting with the remaining dressing and it was delish! The only thing that amazed me was that it took a half an entire jar of bay leaves! I wonder if I could grow them? Laughing Laughing Again, it was great and this I will be making again maybe even at Christmas for something a little different than your ever holiday wares,
