If your missing bread you might want to try this idea. It's a spin on the muffin recipe. I triple the batch , and then bake in a 2 cup petite corning wear baking dish that has been sprayed with pam it works great it bakes in 3 mins in the microwave. I tried baking in a larger baking dish for the bread but seemed too dry and not the right size for a sandwich.
You can use all milled flax for the recipe or part or all almond flour or a soy blend would work also I then slice it on horizontal. I now can have a sandwich any time I want or with-in reason, it holds together great and not necessary to add any oil as it comes out wonderful Want a muffin different baking dish or coffee cup then add , blueberries, or strawberries nuts be creative it's so fun coming up with new ideas. increase baking time if adding fruit.
Jane RECIPES FOLLOWS
Low carb bread recipe
3 beaten eggs
1 1/2 teas baking powder
3/4 Cup milled flax or a blend of flours
I use 2 pks of sweeter
Mix very will spray 2 cup corning ware baking dish with pam
Bake 3 mins in the microwave
slice loaf on the horizontal
yields about 5 slices
1 Muffin recipe
1 egg beaten well
1/4 Cup almond flour or your choice of flours
1/2 tsp baking powder
2pks sweeter or more if you like
cinnamon to taste
flavoring 1 teas
fruit or nuts of you choice
I Bake 2 mins and 30 seconds if it has fruit in it

I've actually made the 1 minute muffin (the 1 muffin recipe you have posted, but with faxseed meal, not almond) the last couple of days.
But.... I didn't make a muffin. I spread it out in a silicone loaf pan and nuked for 1 minute. Then I cut it in half, and made a grilled cheese sandwitch with it. Acutally quite good. Some people use half flaxmeal & half almond.
Oh, yesterday I used 2 drops of Sweetzfree, and sprinkled in a little Cinnamon. But today I left both of those out. For the grilled cheese, I'll leave them out in the future, tho they really weren't too bad in there. But a little too sweet for me.
And I just noticed that the 1 muffin recipe didn't show any baking powder. My recipe called for and I used 1/2 teaspoon. Oh, and I did use abt (didn't measure) 1 - 2 Tbsp Coconut oil - melted in bottom of the loaf pan. I mixed all the ingredients in the pan, then spread out.
I didn't add any nuts or anything else.
Some might prefer to make this with golden flax meal, but I used the dark, and it was fine for me.
Sunflower seeds would be quite good in this, but I didn't necessarily want it for my grilled cheese. _________________ Billie

If a person wants square or rectangular bread instead of the round, and doesn't have a silicone loaf pan, they could use glad, ziplock, or similar storage bowls instead. I've used them with another kinda similar recipe and they work well.
Oh, I just now thought, I want to sprinkle down some sesame seeds in the pan next time, and some on top. I do wish my seeds were roasted and not raw seeds tho. But oh well, guess they'll cook at least some in the micro. _________________ Billie

OK girls! I have been meaning to try this for some time but have not gotten around to it till awhile ago. I didn't change it any except in the fact that I added some salt and vinegar to it (1/8 teaspoon of each actually). I used 1/2 cup flax seed meal, 1 teaspoon of baking powder, 2 eggs beaten and the salt and vinegar as mentioned. I mixed well, sprayed an 8 inch square glass pan, poured the mixture in and spread evenly and then microwaved it on high for 2 minutes, removed from microwave, removed bread, placed on wire rack for a minute and then cut the entire square horizontally and then cut it vertically giving me 4 PERFECT sized sandwich squares! I made bologna and cheese sandwiches for a snack with mayo and mustard and they were so good! Here is a picture below of how the bread turned out. I must say thanks and it is a keeper since I can have this and enjoy a (wait, listen, you gotta get this) HEALTHY EXTRA FIBER FULL OF OMEGA 3 SANDWICH! with NO carbs! I do appreciate this recipe and it is a keeper for me,

I made french toast yesterday. I made the "muffin" in a square storage container about the size of a piece of bread. Nuked it 1 min, cut in half thru the middle making 2 peices of bread. Mixed up some egg/milk "batter" (use your favorite french toast "batter"), and dipped the slices in it, and fried/grilled. (I used half golden, half dark flax seed meal in this.)
Next time, I'll either make in the loaf pan again, or use 2 "dishes" (pouring half into another dish, after I've mixed it in the first). Probably use the loaf pan. Or double the recipe like David did, and cook in 8x8 glass pan (silicone if I had one, but I don't).
David, just curious, why the vinegar addition? _________________ Billie

Well Billie you know me I am a vinegar head and to me it just taste good in it. Maybe not everyone's cup of tea but I like it! By the way, your bread looks wonderful! perfect bread shape and size! Good job,

That looks like real bread; I'm impressed! I have to try this. I use l/c tortillas, but it would be nice to have a "sandwich" for a change too.

Great job guys ! I wish I could share a picture of my master pieces but no can do, lacking the tools and information. I have been eating the flax bread for some time now and wanted to mix things up a little as I enjoy a white type of bread for turkey or grill cheese . I must say it was a wonderful creation
I used almond flour ( 6 Tabs ) , oat flour (4 Tabs, a bit higher in carb I know , not something I will do often ) and 2 Tabs soy flour, with some herbs and onion powder it came out perfect . I can hardly believe how easy and good this was the possibilities are almost endless with a little imagination . I plan to try almond flour and soy flour soon, however I am not a soy fan. so I keep putting it off. If someone trys it please let me know the out come.

Wow, this is great! I have been experimenting with it and so far here's my favorite:
Savory
2 eggs beaten well
4 tsp. coconut oil or melted butter
1 teas baking powder
¼ Cup almond flour
¼ cup flax meal (all I have is golden)
1 pkt Splenda
1/4 tsp apple cider vinegar
1/4 tsp salt (or a little less)
dash garlic powder
rosemary-maybe 1/2 teaspoon
Bake 2 minutes in 8X8 glass baking dish then cut into 4 slices
toast lightly in toaster
Sweet:
2 eggs beaten well
4 tsp coconut oil or melted butter
1 teas baking powder
¼ Cup almond flour
¼ cup flax meal
splash of vanilla
6 pks Splenda (I wanted it sweet)
lots of cinnamon
Bake in micro for two minutes, slice into 4 slices.
toast lightly in toaster, butter, sprinkle of splenda and cinnamon on top--Cinnamon toast-yum!
OR
mix cinnamon, cream cheese and splenda-spread on top. Again, yum!
Thanks Jane, this is definitely a keeper. And thanks to David for taking a picture so that I'd try it! I'm so very happy to have toast to eat with my eggs that takes only 5 minutes to make!!

I made this today and its wonderful. I made it Davids way and in a 8 x 8 glass pan you can cut into 4 equal slices with almost 0 carbs!! I still have 2 left for tomorrow's breakfast. I wrapped them up in foil and put them in a plastic bag so I hope they will be alright for tomorrow. I want to experiment and try to make this into a pretty good round bun. Wonder if it can be done?

Christina, for a bun make it in a round container. A grab-it bowl (or that type bowl) will work, as will a round storage bowl. Just about any round bowl that is microwave safe.
For buns I'd do the original recipe (amounts anyway, you may not want the splenda) for each bun. _________________ Billie
