1 TBS coconut oil or butter, melted in micro for a few seconds

2 TBS flax meal

2 TBS almond flour/meal

1 egg

1/2 tsp baking powder

sweetener to taste (splenda or some brown sugar sub is great too)

spices (pumpkin pie spice is good or cinnamon, etc.)

If in a hurry, microwave. But I almost always bake mine now, 350 degrees for 20 minutes and the texture is just like a regular flour muffin, IMO.

The sky is the limit with these! Add sweetener, vanilla, banana flavoring and walnuts--banana nut muffin!

Add sweetener, vanilla, coconut extract and unsweetened coconut-coconut muffin!

Leave out the sweetener and use your favorite spices-savory muffin!

You can even mix up your ingredients the night before then all you have to do is add the egg in the morning.

I have the stuff to try this but checked a couple of the other site and it says to use 1/4 cup of flax meal,and this recipe calss for 2 T.and 2 T of almond flour,which is the correct one?

Hi Leslie-

This recipe makes one muffin. I suppose you could use 6x the amount of ingredients and make six at a time but I have never done that. I just make them one at a time. Hope you like 'em!

Thanks for answering! The recipe sounds yummy and looks yummy too. I made the Stella's blueberry muffin recipe. I couldn't believe how good they were. I had to tweak the recipe abit because I didn't have all the ingredients exactly, but they were still awesome. Even with the soy flour, they still tasted like a high carb muffin to me.

I'm new here so I have a question about this muffin recipe. I tried one today. They're very good and will help me with breakfasts as I find eggs taste awful to me and I've never liked them. I've read that flax seeds have about 50 carbs in one cup so I'm wondering if flaxmeal is high in carbs. Is this a loaded muffin?

I've made a big pan of the reuben w/kraut (with the no sugar Thousand Island homemade dressing). I love that! I haven't lost one single pound in two weeks. I did make as a desert, one cup of ricotta with banana flavoring and a tad of Splenda yesterday. Is this wrong? I'm trying hard to stick with it but not a pound after two weeks!

Hi Linda! I have never bought plain flax seeds, but flax meal is just the seeds ground up. There are 4 carbs and 4 fiber in two tbsp=0 net carbs.


Full fat ricotta is good. I don't know the exact counts on that off hand, but I have about a half cup with a little splenda and cinnamon on top. Be careful with the Splenda if you count carbs though. The pourable kind doe shave carbs. One carb per tsp. The packets I believe are less, but someone else would answer that better because I don't really use them.

BTW, I can't eat flax everyday or I won't loose. Of course, everyone is different. I just had to limit it to two or three days a week. I also can't even look at diet soda or I gain...it's odd, but were are not all created equal...ahhahah!

Welcome to the site Linda!! I'm not sure about the muffin recipe I haven't made them someone will help you out on that. Linda visit the home page where George explains the "shopping" part what are allowed food etc. Don't worry so much about no weight loss yet It will come (trust me) keep with it don't lose steam!! search the site of recipes and what kinds of veggies dinners and desserts you can have. I again haven't had ricotta w/ splenda so I can't tell you about that either. One thing I find helpful for me is journal my food and count what carbs I eat everyday, that way you know if you have too many carbs If I have too many carbs I won't lose weight. Thanks to both of you! I have been on low carb before after having my last child and lost all the weight. This time though, it's a little tougher and I'm a little older. For some reason, I'm more terrified of all the higher fat these days and hoping I don't have a stroke from eating (gulp) bacon. I've managed to eat, over the span of two days, the whole pan of fake Reuben sandwich recipe. I loved it! I had no clue about Splenda without the packets, having so many carbs. Whoops. I have my soy lattes with Splenda just about every other day. Plus, trying to separate meals for a family (who do not need to lose weight) is exhausting.

Can I have French Onion Soup without the bread? I made a small pot of it (with white wine...that's just for mommy!). I used vegetable broth instead of beef and it tastes exactly the same (because I drank the white wine...everything tastes better with wine!).

hi there,

Just make sure you read the ingredients list of your broth you use. Make sure there isn't any added sugars. The wine.....be careful....you're gonna want to make sure any wine is a dry wine.

If you're a heavy latte/coffee drinker, watch the splenda. There's about 1 carb per packet and it can really add up quickly. Some on this site use the liquid splenda which has practically none! I am going to get some, haven't tried it yet.

This is my second go around with low carb too. I lost 35 pounds the first time about three years ago. It is harder this time, but my schedule is also different than last.

Okay, I'm now a believer!! Finally tried the One Minute Muffins. I have a new breakfast treat.

An added bonus: my stepdaughter likes them, too!

We've done them with blueberries, but will be experimenting! I like eggs, etc. Mornings are too hectic for that most of the time, but I was getting really tired of smoothies!! Rolling Eyes
