How long is TOO long to marinate something. The reason I ask, is I was thinking now that it grilling season, that I could do up some chicken and pork with George's marinating stuff on Sunday, and have them ready to pop on the grill during the week for quick meals.

Dinah,
I think the longest I've marinated London Broil has been 24 hours. Basically I usually put it in the marinade in the morning and grill it that night, but occasionally I'll put it in the night before. Depending on the marinade, I have to wonder if you put it in too long that the meat might have a strong marinade taste. Then again, you might want that flavor.
It's a great question, tho. Maybe George will pop in and answer it for us.

Hey Dinah,
You don't want to marinate more than 24 hours BECAUSE depending on what's in it (citrus and/or vinegar/acidic type stuff) will actually start to "cook" the meat and the texture will get yucky and it will be tough when you get around to cooking it.
