OK....I am really excited. I found this recipe and tried it this morning and I loved it so much that I am still eating as I post this!!
AS a newbie still learning this site, please forgive me if this has been posted already, but I think it is worth posting again.
I have been trying a lot of recipes. I am still experimenting with the flax meal/soy meal etc. I think I will get the hang of it as I continue to tinker. But I have to tell you, this is the 1st recipe I really loved (ok, the pb cookies were pretty darn good, too!)
Here it is:
1 cup almond meal
2 eggs
1/4 cup water
1 t. baking powder
2 T. oil
1/4 t. salt
1 t. -1 T Splenda (depends on how sweet you like your cakes)
Mix ingredients together and cook as you would other pancakes. They won't bubble up like the others, so you need to check the bottom and flip when brown. Makes about 6 pancakes. I was full after 2!!
I topped them with some SF syrup and a sliced strawberry.
Hope you will try them if this is a new recipe to you. I thought they were delicious!

Hi Marissa!
There is a similar one here but not this exact one. And sometimes the slight changes can make all the difference! I tried the similar recipe the other day and man were they filling. I used Trader Joe's almond meal and that one is whole almonds ground up. Next time I do these I'm going to try using blanched almond meal. What kind of almonds did you use?

I used the Trader Joe's almond flour too...I forgot I also added about 1/2 t. of vanilla...just for taste!!
My husband is struggling with any white flour/sugar subs. He just can't get used to the taste. I think he might like these pancakes though...especially with the fresh berries! |

Marissa~ Those are the ones that I make and my little guy adores them with blueberries...just too yummy! Pancakes are my fav moring breakfast.

This is my most recent new favorite breakfast. I always add some vanilla and a little cinnamon too. I discovered Mrs. Butterworth's sugar-free pancake syrup and it's wonderful. Yes, it has some aspartame but since I gave up diet Pepsi I figure I can have a little once in a while!

I made these this morning, and added cinnamon and topped with sf syrup and sliced strawberries (thanks for the idea ) They were great! Hubby loved them and they were super filling.

Hi guys!
The dutch baby recipe can take the place of pancakes too! The single size version is great when you are craving a pancake and the family size version is thicker and reminds me of french toast! Both are GREAT!
I'll have to to give this recipe a try too! Thanks for posting it, Marissa.

Yeah Karen! I'm trying to make things smaller, NOT bigger!
Funny thing is, the first two times I made these I didn't like them. But that was because I was trying to make my own syrup which did not work out at all. But since I've given that up, I love these things!

Speaking of syrup, I bought a bottle of Cary's sugar free syrup. Silly me, didn't read the label (cracks self on the knuckles with a ruler for that mistake) because the front said sugar free so I "assumed" no carbs. Well it has 12 grams per 1/4 cup. Zoinks! Tastes really good though so I try to use it sparingly. And it was pretty expensive (because I had to go and buy the biggest one on the shelf) so I'll use it up but, any reccomendations on a low carb brand?
