Cheeseburger Quiche

OK - well I found this. It's not the one I used, but it's very close. The only real differences are I added some chopped mushrooms, some additional spice (anything you like to taste), and I used heavy cream instead of half/half.

I found this on lowcarbluxury.com

Ingredients:
1 lb. very lean hamburger
1 small chopped onion
4 slices crisp-cooked bacon, chopped in bits
3 eggs
1/2 cup mayonnaise
1/2 cup half-n-half
8 oz. shredded cheddar or swiss cheese
garlic powder to taste (optional)
white pepper

Directions:

Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

Preheat oven to 350°F.

Combine remaining ingredients in mixer bowl and whip well. Pour mixture over beef "crust" and bake 40-45 minutes until top is browned and "set". Cool 15-20 minutes before slicing. This can be packaged in Ziplocs or plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.)

Serves 6. 2 grams per serving.

Additional note from Billie:
We changed to mozzarella cheese, added the mushrooms, used chopped garlic instead of powder, and Creole seasoning instead of pepper. Also used the cream instead of half/half.
Sometimes I use shredded Cheddar/Jack, and sometimes (usually) I use both mozzarella & Cheddar/Jack. Also sometimes add sour cream, which is really good, sometimes I add broccoli, and today I made one using some leftover asparagus. So it is quite versatile, you can use whatever cheese you like, and add veggies or not.
I don't mix the cheese in with the egg mixture (I always use more eggs), but layer it on top of the burger. I use the packaged Real Bacon Bits (when I think about adding the bacon at all).

thanks for posting this billie i am cutting back on the protien some right now but will definitely give this a try on a meat eating day. sounds really good!

We like it. I always make at least 2, sometimes 3, so we can have them for lunches the next few days.
It's something that I can cook when my big family comes too, and doesn't take too much effort, and itsn't too expensive for a big crew.

Bumping this recipe up since we have been discussing quiches. I tried it tonight and loved... it! It is very filling and easy to make. I will make it again. I ate it with the pickled jalapenos which I meant to add to the recipe and sour cream. Donna

Thanks Billie! I made this yesterday and it's great! I added jalapeños, mushrooms, and a mix of swiss and cheddar. It's a keeper!
