I thought it might be a good idea for everyone to post their favorite, couldn't have made it without this, recipes! Here are mine!

From George's cookbook:
No-cook bourbon BBQ sauce
Breadless bread pudding
Waldorf Coleslaw
Rachel's wonderful cheesecake

COCONUT BARK - ALMOND JOY
Recipe By : Adapted by Vickilynn
Serving Size : 6

* 6 Tablespoons coconut oil, organic, virgin, expeller-pressed
* 1 teaspoon vanilla extract
* 1 1/2 Tablespoons unsweetened cocoa powder (my family likes less - I use 1 Tablespoon for their version and 1 1/2 for mine)
* 1/2 teaspoon xylitol or stevia - more to taste (experiment with your own family preferences) [I use a mixture of liquid splenda and erythritol]
* 2 Tablespoons unsweetened shredded or chopped coconut
* 1/4 cup ounces almonds, raw, chopped

Measure the coconut oil (solid) and melt. Whisk in vanilla, cocoa and sweetener until COMPLETELY dissolved. Failure to do this will result in separation and an oily top.

Whisk in remaining ingredients and again, make sure they are completely incorporated.

Pour mixture into pan and tip pan to evenly spread to even thickness. (I use an 8 x 8 cake pan lined with parchment or 9 x 13 pan for double batch.) Place pan in freezer on level shelf and let sit 10 minutes (longer for double batch) or so. It will harden quickly and you simply snap off the desired amount to eat. Keep cold.

Jello
1 pkg unsweetened Kool-Aid
1c splenda [I use mixture of erythritol and liquid splenda]
2 pkts Knox gelatin
2c boiling water
2c cold water
Mix Kool-Aid, splenda, Knox gelatin in bowl. Add Boiling water; stir til dissolved. Add cold water. Pour into desired serving dishes. Refrigerate until firm.
This is like making 2 boxes of regular jello. (8 small bowls.) I added strawberries to the strawberry flavored Kool-Aid and didn't even need whipped cream. Although using some legal whipped cream sure tastes good too!

I have several that helped me through the first few months. If they were not near the top of the recipe list, then I have bumped it up so you could find it easily. I don't know how to connect this post with the recipe post, so second best way. Donna

Dinner section -
George's Anaheim Shrimp Scampi (all time favorite)
Hot chicken salad
Smothered chicken(good crock pot recipe)
Sausage Chicken casserole
Cheeseburger quiche

Soups section-
Taco soup

Breakfast, Snacks section-
2 Great dips (I love these for snacks)
LC pancakes (almond flour recipe)
LC pancakes (cream cheese & eggs) - still my favorite

Dessert section -
LC Chocolate mousse (can be thrown together in about 3 min)

I second the mention of the Taco Soup--it's gotten us through many a winter night here in Oregon. And Jenny's Flax Seed Muffins from 2005 is one of my favorites--I was a bran muffin lover before I started low-carb eating, and these have been a perfect replacement. Plus they're great for keeping the "plumbing" clean and free-flowing. . .

Hey Jan, where in Oregon are you? We may be moving to Corvallis in July. I'm very excited. I LOVE the Oregon coast...so beautiful!

Angie, I'm being curious but is it your job that cause your moves? If so, what kind of job to you have? I have noticed you have moved several times and I was wondering. Donna

LOL! Yes Donna I do move a lot! I'm travel nurse. Meaning, I have been doing "contract" work for the last 5 1/2 years. I work through a travel company with a recruiter, they let me know where help is needed and I choose where I would like to go and apply for that position. I contract for 13 weeks at a time. If I like the facility/area and they like me I can extend for longer periods of time. Other times I just want to move on and see other places and/or follow the seasons. That's why I was in Arizona for the winter and we're in Wisconsin and now possibly Oregon for the summer. I love it but it's not a life for a lot of people to be sure. Lots of packing and moving. I guess it's just in my blood, the traveling thing...

Hey, Angie,

I'm in Portland. Corvallis is a cool town, plus you're just a little over an hour from Newport on the coast. Summer is beautiful here, y'know. It may not start till mid-July, but it lasts pretty much through October. I hope you get the assignment!

Me too Jan! We just love the pacific NW and the Oregon coast is the most spectacular sight ever. My furry children will just love running on the beach.

Well, Angie, that is one way to see the country and really get to see it and enjoy the area. With a stay of 13 weeks you have an opportunity to visit the unique sites and attractions. I don't think I could do it because I am such a routine person and the older I get the worse I am about it. You would be in a constant state of adjustment. I have a friend who would probably love that kind of job. Donna
