Since I have eaten the 1 Minute Muffins the past 2 days and added in more fat, I have gained 3 pounds Confused Does anyone else have a problem with too much flax, nuts, or nut butters? Even if they stay in their carb range?

B- Broccoli, Cauliflower
Salmon Fillet

L- "Longhorn Steakhouse"
Big Salad, Cucumbers, Toamtoes, Shredded Cheese
Plain Grilled Chicken Breast (I told them no seasoning)
Ranch

D- Boneless Chuck Steak
Steamed Shrimp
Small Salad
Vegan Mozz Cheese
Ranch

Does that look like a good LC day?

Cathy,

I answered over at the other thread but just wanted to add...

It will take your body time to adjust to new things. Just as it takes time to adjust to low carb it will take time to adjust to adding in more fats. If you don't feel bad then I'd give it time. You really do need the fat in your diet. Our cells are made up 50% of saturated fat and they need a dietary supply of it to regenerate new and healthy.

Thanks Angie for the links, I will look those over.

4 Mile Boosted Walk with Strength Band and I used the 5lb weights per hand instead of the 3 lbs. I could tell a big difference!!!

B-nothing got up at 6:30 and had to take my daughter to camp, only slept 3 hours so I was not hungry at all!!

L- Small bowl of Hot Chicken Salad Casserole
Pieces of chicken with veganase
1 Boiled Egg
Turkey bacon
Walnuts
Mozz Soy Cheese
Soynut Butter

D- Chicken Breast on the grill
Mock Garlic Mashed Potatoes (Ate WAY too much of these!!!)

Tried to eat something small every few hours to see if that would help my cravings. We have veggies coming out our ears from my daughter's garden, and I was SO excited to find out that patty pan squash was a summer squash and very low in carbs, I always thought it was a winter squash. So it looks like you will be seeing a lot of "squash" on my daily menus. I have 16 cucumbers on my counter that I picked just today and there are a lot more that will be ready to be picked by tomorrow.
She has everything in her garden, many types of squash, zuchinni, different types of eggplant, tomatoes, cucumbers, cantaloupe, watermelon, green beans, purple beans, soy beans (Edamame),
red/orange/yellow Bell peppers, broccoli, cauliflower, a variety of lettuce,
I know there is more, I just can't think of anything else right now, and she has a big variety of herbs. I will try and post a picture of her garden.
The squash was delish tonight!!

I just posted some pictures of her garden on the Garden Forums.
They don't do it justice though!! We couldn't get the whole thing in the picture because it's so big. We live in Georgia and if you come over I would be more than happy to share Very Happy And then we could have lunch and chat Very Happy

Cathy, that is a gorgeous garden. Your daughter has a green thumb. Are you having a drought like we are over here in West Ga? Your land looks like it has gotten more rain than we have. She should be very proud of her hard work. Didn't you say you home school your children? Is the garden part of her school work? Donna

Just in case you didn't see this in the "Garden Post" here is what I wrote about my kiddos, and yes we do homeschool and she is going to Major in Horticulture at UGA.

I'm very proud of all my kiddos Wink
But yes my daughter's garden is really awesome. She has done every bit of it by herself, all the way from tilling it, growing seeds indoors and hardening them off, making her grid and organizing where everything should go, she researched to see which plants were compatable with one another and to see which plants would fight Laughing She wanted to do it all herself, she gets very territorial if you try to help.

She is going to college in 2009 at University of Georgia and major in
Horticulture (Imagine that) She was at a Plant Science Camp at the University this week and learned a lot. She is very excited and REALLY enjoys what she does. She also raises goats, 1 sheep, 1 horse, chickens, breeds holland lop rabbits and sells them, sells fresh eggs, and plays the fiddle, guitar, and teaching herself the banjo. A few people at our church has put together a small bluegrass band and she loves it. She is not your typical 17 year old which is just fine with me Wink

We do homeschool which makes it nice for her because she can do her outdoor interest (animals and garden) and also do her school. Plus, homeschooling isn't just about "book work" Wink

My 14 year old is interested in racing, and races "karts" It is a lot of fun because just him and I go and we have a 2 hour drive just to talk and hang out with each other. I get to help him set up and make sure all the nuts and bolts are on tight and then I video all the race so he can come home and critique himself for the next race.

The reason I am the only one that goes is because we only have one vehicle (Durango) and we have to lay down all the seats and squeeze his kart, tool box, gas, and air tank in there, you should see us we sure are a sight at the track, everyone there with their trucks and nice trailers, and here we come stuffed like sardines in our Durango. But you know what we don't mind we are there to have fun and not go into debt!!!
My husband works on Sat. so he couldn't make it till the afternoon and the tracks are 2 hours away, my daughter watches my 2 little ones at home. But hopefully this will be good memories that my son will have about mine and his time together at the track.

My 9 year old has a HUGE BIG heart and is the peacemaker. He will do anything to make you feel special. He is also learning to play the Banjo, and part of the bluegrass band.

Then we have the baby Makayla age 5, and her gift is to gab Laughing In fact the other night she told me "Mom, aren't you glad you had me? Because I love to talk and this family might be boring if you didn't have me" Laughing She is extremely smart, and I'm not just saying that. She can read anything and will sit down and read and read and read. She can remember anything and everything too which sometimes isn't all that good. She is also very sweet and loves her older brother (the 9 year old) They are like best friends.

So there you have the "brag" for the night Wink Hope you didn't mind me sharing how much I love my babies.
