So last night I had the most delicious dinner. I went to Linda's website and printed out the recipes for "Roast Meatloaf" and the "Colcannon". Unbelievable! I made an individual meatloaf and cut the recipe for the Colcannon in half so I had a third last nite. If you haven't checked out her website you really should. She has some fantastic sounding recipes.

For tonights dinner, I have as we speak, chicken thighs marinating in cream (which I cut down with water) and hot sauce. I'm planning on crushing some hot and spicy pork rinds and using it to coat the chicken which I will oven fry. And of course, I'll have some more Colcanon with it. I used to make this all the time when I was doing WW only then I marinated in buttermilk and used cornflake crumbs. I'm sure my new way will be even better.

Please post your dinner recommendations and perhaps we can all obtain some new and delicious ideas! Smile
