My boss's wife has a squash casserole recipe that is made with Ritz crackers, sour cream, mushroom soup (i think) cheese and more ritz crackers on top. She cooks the yellow squash and onion in water, then drains it real good, adds the rest and bakes it.
Any ideas on what to use to replace the crackers? I know the soup can just be left out..... whatcha'll think? _________________ Dingie Dinah

Dinah,
Here is a recipe I ran across for Baked Squash. I haven't tried it so I can't really say how it is. I've used one similar and really liked it. I don't know where that one is at the moment tho. I'll look for it & see how it compares.
Anyhow hope this helps you.

Baked Squash
8 yellow squash, sliced
1 white or Vidalia onion, chopped
3 Tbsp. butter, melted
1 cup sour cream
1 cup cheddar cheese, grated
1/2 cup parmesan cheese, grated
1/4 cup real bacon bits
1/4 tsp. nutmeg
1 clove garlic, minced
Salt and pepper to taste
Paprika
Boil squash and onion until tender, drain. Place squash and onion in a baking dish and pour melted butter over.
Combine sour cream, cheddar cheese, 1/4 cup of Parmesan cheese, bacon bits, nutmeg, garlic, and salt and
pepper and mix well. Place in baking dish with squash and stir. Top with the remaining Parmesan cheese and paprika. Bake for 30 minutes at 350 degrees. |

i tried something close to that Junie-Poo! it was really good too. i didn't season it like that, but i used sourcream and shredded cheese, salt pepper and garlic salt. it was really good! _________________ Dingie Dinah

I'm at work but I'll try to remember the recipe, I've made it all my life, I should be able to.
Boil together 6 yellow squash and a small onion. When they are soft drain off the water and mash with a potato masher. Add one lg egg, 1/2 cup grated cheddar cheese, 1/2 a stick of butter, and I think 1/4 of a cup of cream (maybe a 1/2 a cup if it looks dry), and a handful of low carb bread crumbs, salt and pepper to taste. Pour into a casserole, sprinkle with paprika, and bake at 325 for 1 hour. I have no idea about the carb count, but it doesn't do anything to my blood sugar. |

2 pounds sliced yellow squash
small onion, chopped
4 T butter
salt & pepper to taste
2 packs splenda (or to taste)
1/4 cup cream
1 egg, beaten
preheat oven to 350
boil onion and squash in a little water till tender. Drain well and mash with potato masher. drain again (I've put mash in paper towel or kitchen cloth to get all the moisture out before). add other intredients & adjust salt/pepper & splenda to taste. Pour into greased casserole dish. Bake at 350 for 30-40 mins till firm.
without cracker crumbs, you can end up with some extra water that separates out---be sure to drain very well after mashing _________________

| I tried June's squash casserole tonight. Oh my gosh, it was so good. I didn't have bacon bits so I just added a little bacon grease for the flavor. Awesome flavor. This is a keeper! Donna |
