I made this "experiment" tonite - yum we loved it!
Devils Food Bundt Cake Surprise
Cheesecake filling:
8 ounce package cream cheese
1/3 cup sugar substitute
1 egg
3 oz semi sweet or dark SF chocolate chips/chunks
Cream together cream cheese, sugar substitute and 1 egg. Stir in chocolate chips/chunks.
Chocolate Cake:
2 1/4 to 2 1/2 cups pecans (to make 2 cups pecan meal)
4 tablespoon cocoa
4 eggs
1 tsp vanilla
1 1/4 cups sugar substitute
1/2 cup (1 stick) melted butter (I use the high fat European style)
1/2 teaspoon baking powder
Place the pecans in food processor. Ground to meal (pecans process very quickly). Place the rest of the cake ingredients into the food processor. process for 30 seconds, scrape down sides and then process again for another 30 seconds.
Pour half of cake batter into bundt pan which has been sprayed with Pam. Put the cheesecake mixture on top of the cake batter, along the middle (not touching the sides of the pan). Pour the remaining cake batter over, covering completely.
Bake in preheated 350 oven for 45 minutes. Let cool on wire rack, then remove cake onto a serving plate. You can drizzle cake with your favorite sugar free chocolate sauce. _________________ Foxye

Foxye, you have a winner on your hands! This is by far the best LC cake I have ever made. I used about 1 3/4 cups almond flour, and topped it off with soy flour cause I was short on the AF. Didn't do the chocolate chips cause I was in a hurry.
It was delish!!!! This is what my hubby got for his birthday cake. I know I'm on induction, but I couldn't help but taste it!

Foxye!!! I am SOOO mad at you!!!! Why oh why did you give me this recipe????? It is so delishious!!!! I have made it twice, with Whey Low, and used George's chocolate ganache drizzled over the top.
When it's finally gone, I keep dreaming of making it again. I do believe I may be addicted!!!! ARGH!!! I need a 12 step program to get off of the choco bundt cake!!!! Are you happy now?????

Same here - I love it. I now do it with other tunnel fillings too - yum!

I have made it in a tube pan - just as a chocolate cake though without the filling. I am sure it would work with the filling in the tube pan! (You may have to run a knife under the cake on the bottom of the pan to to release it cleanly after cooling). _________________ Foxye

Foxy, I made this for my non-lc family over the holiday weekend. Not only was it delish, but it was beautiful too! My sis who is a diehard chocoholic could not get enough! Thanks so much for sharing!

Foxye, this cake is so delicious! I had a slight problem though.....when I tried to take it out of the pan, it didnt come out in one piece. I"m thinking maybe it needed to be totally cool before taking it out of the pan. Any tips? _________________ Happy lowcarbing!!
