Cream of Anything Soup

1 stick butter
1 onion sliced
1 lb. chopped veggies (broccoli, asparagus, and mushroom are our faves)
1 can chicken broth
1 c. heavy cream (or more) Or use ½ & 1/2
salt and white pepper

Melt butter, saute the onions and veggie until they sweat. Add the chicken broth and simmer 20 min. Puree with a stick blender or put in the food processor or blender to puree. Put back in pan, add cream, salt and pepper to taste and heat through, enjoy.

I got this recipe from a wonderful LC buddy, Annette, from Texas. You can use left over veggies, and just not sweat them out, add after you cook the onions. Add garlic too, if you like it.

Very versatile and quick to cook

Thanks I am going to use this. My hubby is in the Produce business and he just brought home a flat of exotic mushrooms so now I will make cream of mushroom soup.

Dinah,

This recipe is terrific! The only other time I tried to make a cream soup it was a long, involved process and didn't come out so good. I made yours with asparagus and used a few extra as a garnish. My family was very impressed. I'm going to make it with mushrooms this week. Thank you!

Yet another good one!! I made the soup last night for today and it was really good.

I made a cream of tomato soup.

I used:

Butter
1 sliced onion
1 can of ground plum tomatoes ( Primo)
1 can of chicken broth ( I used my can from the tomatoes to have the same amt )
1 can of 1/2 & 1/2 cream ( yes the same can as the tomatoes )
Salt and pepper and some Splenda to give it a nice sweet taste, not to much though.
I put everything in a big pot except for the cream and just boiled it till the onions got tender ( not to much as I like it crunchy) I took of the heat and slowly added my cream!

Voila ! It was really good

I just wanted to bump this up again for anyone who might not have tried it. I just made a double batch for dinner last night. Oh My Gosh, is this stuff good. This time I used broccoli. I find it easier to put everything in the blender instead of using my stick blender. But however you do it is fine. We added just a touch of sharp cheddar on top of each bowl. How in the world can anything this good be sooooooo good for you? Dunno, but it sure is. I've decided that the next batch I'm going to use cauliflower and leave it slightly chunky. That way it will be like my favorite cream of potato soup.

So whether you're new to this woe, or someone who's been here for years. Give this a try. Thanks Dinah for another great recipe!!!!!!!!!!!!!
