I hope Dinah does not mind, I took how she makes her Cream of Anything Soup that's posted here, and made it into Clam Chowder, with a few tweaks and kicks and Bams. This is what i did........
1 stick butter
1/4 c. chopped red onion,
1/4 c. chopped celery
1/4 c. chopped gr. pepper
2 c. cauliflower cut to resemble diced potatoes...set aside
3 strips SF bacon fried crispy
1 TBS bacon drippings
2 1/2 cups clam juice
1/2 c. course chopped clams drained
1 1/2 cup heavy cream
salt and pepper to taste
Dice the cauliflower and boil in water about 5 min. Do not over cook. Drain and set aside.
Melt the butter in a pot with the onion, gr. pepper, and celery.
Crumble the bacon and throw that in along with the bacon drippings. Saute' about 5-7 min.
Take 4 TBS of the veggies out of the pan and set aside.
Add the clam jiuce to the pot and simmer 20 min.
Pour everything into the blender or food processor and puree.
Put back into the pot.
Add the 4 TBS of veggies you have set aside
Add the chopped clams, add the cream, add the cauliflower.
salt and pepper to taste.
Heat it up and enjoy!
Seems like alot to do, but I think it's worth it. I had missed my clam chowder so much. I find..if you assemble all you ned before you start , putting it together goes really fast.
The clams i used were fresh. you could use minced can clams.
I really enjoyed this. It's a keeper for me. Thanks to Dinah for the blueprint.

OMG LISSA!!! This was sooooooooo awesome!!! The only thing I did differently was use a little bit more celery & onion and omit the green pepper, oh, and I didn't have enough clam juice so I substituted canned chicken broth. Boy did this satisfy my craving for clam chowder... it was just soooo good! Thanks so much for sharing!  |

Well, I made this recipe from memory yesterday morning, and didn't have all the ingredients, but it's good!!! Just not "clammy" enough for my taste. I will make sure I have clam juice next time, and either diced or whole clams instead of minced. I used too much chicken broth (3 cans) and not enough cream (maybe a scant cup) I used probably twice the veggies that Lissa did too. Of course, I only wanted to make a "small" batch, and ended up with a stock pot full! I just don't know how to cook small! LOL
Oh, and I didn't use bacon. Completely forgot about that, when I was organizing in my mind. I bet that would add a lot of flavor.
I will definitely make this recipe again, and I might even follow the directions next time!!!! (my dh gets so mad at me cause I never make anything "by the recipe". But that's the fun of cooking!)

This sounds really good. Do you think I could use chopped turnips and fool my dh into thinking they are potatoes? I've not used turnips much. And I KNOW he'll detect cauliflower... _________________ Angie

| I can't say about the turnips because I have never used them as a substitute. Do they have a strong flavor? My dad loved them but I have never really eaten them. I love rutabagas! dab |

I made this for my parents and me on a snowy Spokane day and it was wonderful!!!!! We even managed to leave enough so my husband could have a couple spoonfuls to taste it. He really liked it also. I will be making this again and often.
