Ingredients

1 Chopped Onion
1 Chopped Green Pepper
1 lb Ground Sirloin
1 lb Ground Chicken
1 lb Ground Pork
1 lb Ground Turkey
1 lb Ground Buffalo Meat
Small Container of Sliced Fresh Mushrooms
A bunch of Chili Powder (probably 1/3 cup) maybe more
Some of Emerils Essence (probably 3-4 Tablespoons)
Some Cajun Spice (probably 3-4 tablespoons)
1/4 of a bottle of Louisiana Hot Sauce
Two Cans of Black Soy Beans
One Small Can of Chopped Green Chilis
Two small cans of tomato paste
One Big Can of Tomato Sauce
One Big Can of Whole Peeled Tomatoes
Salt and Pepper to taste

In a very large pot, on medium high, brown all the meat and veggies and spices, spoon off the fat (if you prefer) then add tomato paste, canned tomatoes and tomatoe sauce and Soy Beans.

Bring to almost a boil and then reduce to a simmer and cook it as long as you want...the longer the better. Taste often and add whatever you think it needs...usually chili powder or hot sauce.

Makes a ton, and freezes well, and tastes better each time you warm it back up.

Also, when I eat chili, I always add some shredded cheddar cheese and a spoonful or three of sour cream. Yummy

Mmmm that sure sounds yummy. Where do you find the ground buffalo? My hubby often orders the Bison burger and Ruby Tuesday's, but I haven't found the meat in the grocery stores around here.

Thanks for posting!

Whole Foods has the buffalo meat and sometimes Publix does too. An interesting thing about the meat, is that it has not cholesterol, so it is very healthy, and tasty too!

I can't remember for sure, but I think it was kind of pricey at 5 or 6 dollars a pound.

I have thought this combination of ingredients looks delicious. If anyone has already scaled down all the amounts for a total of one pound of meat or less, I would love your figures. Smile Save me the time of trying to figure it out! LOL And give me a chance to try it. Thanks!
