I am looking for ideas that you have taken to pot lucks that were a hit.
I always want to take things I can eat but that will also be enjoyed by carbavors. So anyway I am kind of wanting to create and on site potluck resource that all of us can go to for good tested recipes that we would feel good about taking and serving. We need a variety of things because sometimes you get the potlucks where A-L bring main dishes, M-R bring sides and S-Z bring desserts.
So here's my last dich one that I pull out of the bag when I can think of nothing better and have no prep time.
I bring a big bowl and tongs and my wishbone spritzers collection in a basket and drive through McDonalds and grab 3 of their salads and put them in the bowl and wha la I have a lovely salad with little or no effort.
One rarely can go wrong with salad.
Another I would be happy to bring is a variation of George's pound cake in the new book. I used a can of cherry pie filling sweetened with splenda (I buy it at Wallmart) I pam spray a large rectange cake pan. Then spred the cherry pie filling across the bottom of the pan and then top with Georges pound cake. Boy oh boy was it scarffed up fast.
So I am wondering what do you bring. _________________

Hi Foxye,
I knew you would be a great resource on this one. Thanks for those great ideas. You reminded me of another one of yours that I use all the time and have served to company with rave reviews. Your Quiche Stuffed Peppers. One would probably need to make several batches for a pot luck and artfully stack them in a serving bowl .
Here's the link to the recipe for anyone else who would like to try this one. Boy Oh boy is it a hit at my house - and I'm not a big pepper fan but this is such good recipe. My 8 & 11 year old children like this one too.

My lovely wife's mock hash brown casserole is always a crowd pleaser for us.

Oh Mark..........those hash browns are awesome. That's something hubby often requests. The only thing I dislike about the whole thing is cutting the spaghetti squash. There just isn't an easy way to do it. But I manage. I even tried Emeril's method once (but NEVER again!!)...............throwing it on the floor and cracking it open. What a mess!!!!!!!!!! Don't know why I ever thought it would work for me. But it worked just fine for him. Of course I didn't have a host of people behind the scenes cleaning up the mess while the cameras were off!!!! Who knows what kind of mess he really had that we didn't see.

oh junie poo, you made me laugh!!!! he actually DID that????
I always cook mine whole, in the oven for about an hour, and let it cool. then you can cut it easily. it's harder to remove the seeds, since they kinda cook into the mix, but it's easier than trying to slam dunk it!!! (we are watching UT basketball!) _________________ Dingie Dinah

Oh yeah Dinah, he really did that. And I was DUMB enough to think I could do it too!!!!!!!!!!!! Needless to say I had a good laugh at my own expense too. Geeze!!! What on earth was I thinking. I had cracked spaghetti squash all over the kitchen floor. The seeds came flying out and they went everywhere too. Oh what a mess to clean up. But I got it opened so I could clean it easily !! That was one of those times I was glad you and Su were not around with your cameras. I just know it would have been on here and Facebook. Ya Think?

I'm with Dinah. I've been cooking mine in the oven for a while now. I used to fight with it forever trying to cut it open while it was raw. Thanks to DebB (and Dinah for saying before that she now did it that way and loved it) for tellin us about cooking it that way.
My problem is thinking about cooking it soon enough before & gettin it in the oven.
June, that reminds me of the first time I tried cooking a spaghetti squash years ago, long before I even thought about low carb.
I had no idea how to cook one. I tried following directions I found somewhere on cooking it in the micro. Well, I did poke holes in it, but not enough. After it had cooked awhile I started hearing this whistling sound like a tea pot. I couldn't figure out where it was coming from. Then about the time I figured it out, it was too late! That squash exploded in my microwave!!! It's a wonder it didn't ruin the micro. OH what a mess to clean up!!! Can't remember now if I managed to scrape up enough of the "spaghetti" to have for supper or not.
I NEVER have cooked spaghetti squash in the micro again. AND I'm very careful to poke lots of holes (fairly large ones with my big meat fork) in them before baking in the oven too.

I can't wait to try it. Sound yummy! I even have a spagetti squash.
I never put it together that Mark's Stacy is HayStace - Sometimes things go right over my head. How cool! I keep telling my hubby that he needs to log in and post here too. Maybe eventullly - he sure is enjoying cooking from George's book. _________________
