Just made these for the first time, (by the way this is my first post), next time I will cut the splenda to half a cup. Yes they are crumbly, but got rave reviews from my roommate who is not low carbing.

I only tasted a tiny bit, because after two weeks of this way of life, I have no cravings for sweets.

Yum, yum, yum! I used 1/3 cup Splenda, 1/3 cup Whey Low and 1/3 cup erythitol. I was very satisfied after a couple of these. Thanks Dinah!

I made them using plain old JIF. I used splenda as the sweetener. When they were first baked they were so crumbly and dry that I couldn't pick them up. The next day they were still fragile. By the third day they were just like regular peanut butter cookies. The fourth day they were gone. Very Happy I think they just needed to pick up some VA humidity.

My DH suggested putting the cookies in a tin or bag with some bread when they are crumbly (so they would pick up moisture). I may try that next time.

does anybody know where to get vanilla extract without sugar/corn syrup? most brands have corn syrup and caramel color...

Is there any way possible I could make this without the egg? Or use the egg substitute? These look and sound REALLY good, but I'm allergic to egg whites and yolks so I couldn't make it like it is written Sad
I wonder what I could do to have something at least like this?
Any suggestions?

I made these cookies yesterday and they are so good! I actually feel like I'm cheating big time when I eat them! These good recipes make it so much easier to stay on track!

I love this recipe, and whipped some up on Saturday. For some reason, all the oil rendered out while baking and the cookies were little hockey pucks. I had to throw them all away.

I used a jar of Smucker's Natural Crunchy PB. I put it in my KA mixer and blended the oil into the peanuts real good. I added the vanilla, eggs and Splenda, but the mixture was real crumbly looking, so I added another egg.

Anyway, I'm wondering if the reason is the oil isn't mixed well with the PB first.... I always keep the PB upside down in the cabinet. I figured the oil would rise up into the PB but maybe I'm full of hot air.....

Anyone have any suggestions as to what I did wrong????? Really ticked me off too, cause I was having a PB craving!

After re-reading this entire thread, I think the next time I'm not going to use the "natural" PB, I'll use sf regular PB. That seems like a common thread here, as I re-read....

That's what my guess would be. I use the Peter Pan with Splenda and have not had any problems with baking and it doesn't have that oily stuff to deal with. My kids would tell me the peanut butter was bad if I had the natural stuff. LOL
