Are you guys missing those fries we don't eat anymore? Want something crunchy? Try George's Jicama Fries. They're so easy (provided you don't get your thumb stuck with one of the points of the mandoline like I did. Be careful, or use a knife or a food processor if you don't have a mandoline).

The recipe is on page 190 of the Livin' Low Carb cookbook.

First of all, when I say "jicama," the usual reaction is "what's that?" Well, for those who don't know, it's a fairly flat fruit (vegetable?), that resembles a big old round, flat rock to me, or a giant potato to others. Here's what it looks like, although this one's a bit rounder than most I've seen



And while this isn't the most attractive presentation, I was hungry, and not about to waste time getting fancy. This is LindaSue's Seoul Chicken with the Jicama Fries.



I used a bit too much salt, and for me, I could happily eat them just the way they come out of the fryer. Since Jicama is very bland by itself however, you might want to experiment with the seasonings.

George, you have a sure winner with this one!!

wow anne, that looks fantastic!!! I love Jicima just raw, but those look totally like fries! kewl!

I really like Jicama fries! I never (or at least rarely ever) put salt on them.
Yum!!!!
As Dinah said it is good raw too. It is good diced in salads.

Jicama is one of the most versatile things I can think of.

I still have a small piece left, so will have to decide what I want to do with it, but more fries sounds like a really good idea (sans salt this time). I'll see how the mood strikes me tomorrow.
