taco soup!!!


i made this today with several changes, to account for the quantity I wanted (leftovers) and what I had on hand

2 med onions diced kinda chunky
1 large bell pepper diced kinda chunky

sweat these out for about 5 min in olive oil

2 1/2 pounds ground beef

add and brown all together, then drain

added

1 large can diced tomatoes
2 cans reg rotell tomatoes
2 palms full of chili powder
1 palm full of cumin
maybe 1 tsp garlic powder
salt and pepper to taste
1 box of chicken broth (i should have cut that back a little. i like thick soups)

1 package cream cheese softned at low power in microwave

add 1 cup cream and heat after wisking a bit
I think i went on 1/2 power for 3 minutes then wisked it up real good.

add that to the pot, and taste to adjust seasonings

soup was kinda thin to my liking, so i added 1 cup of finely shredded cheddar/pepper jack mixed cheese

smells spectacular!!!

Thanks for the info Dinah! We made the soup last night (original recipe) and it was the best yet. Like you we used chicken broth and it was just yummy but we didn't really have leftovers after everyone ate so we were going to double it next time.

We used one can hot rotel and one can mild rotel and it came out awesome. It was a little hotter than I like really but the guys thought it was great Smile

I made this today with a few necessary changes and it is WONDERFUL ! I have become allergic to jalapeno's so used regular diced tomatoes and just upped the chili powder and cumin a bit. I also added some chopped green and yellow bell peppers. It tastes just like a creamy tomato soup ! My husband and son don't like cream cheese, and I know they won't even know it's in there. Thanks !

Be sure to check out the recipe section. Wonderin about something, check out the search.
It's under Forum on the bar above. Also check out the help from the toolbar, and there is a Help forum also. You'll find a lot of answers there. Because of spam & bad posts being able attack this section, it has been closed to new posts, but it is still there to browse, glean answers from. (No spam there now.) Most problems have been addressed there. There is a sticky of FAQs in the General forum. It has links to lots of as the name says Most Frequently Asked Questions about Stella Style WOL!!!. For that matter be sure to check out all the stickies when you have a question. Good chance it may have been answered in the FAQ's or other stickies.

It is quite good isn't? It would make a good tomato soup made without the peppers, & taco seasonings.
