After learning about the Oxo Juliene thingie from Linda Sue, I decided to use an old favorite recipe from pre LC days and replace the pasta with some zucchini spaghetti.
Saute about 4 cloves of garlic (more or less, depending on how much you like garlic) in about a tablespoon or two of oil (olive is best, but I was out of it, so used vegetable). Start the garlic and oil in a cold pan, and saute it for about three minutes, stirring occasionally to keep the garlic from burning.
Throw in about 1/2 pound of shrimp (again, depends on how many you're feeding). Cook about five minutes or until the shrimp start to turn pink. Today I used cooked shrimp, so it took less time. Turn the shrimp, and add the julienned zucchini (I used one zuchinni, and I peeled it, although that's not necessary). Add about 1/8 to 1/4 cup of dry white wine, and bring to a boil. Lower heat and simmer for about five minutes.
This is a very tasty dish, and takes no time to prepare. |
