Today, I got a little creative. I had stuff in the fridge that needed using up, and I also didn't feel like going to the market, so this was tonight's dinner.
I sliced and breaded an eggplant with soy flour and flax meal, and then fried it until it got crisp (which was much faster than with regular flour). I also sauteed some breakfast sausage and red onion and garlic in olive oil and then added a small can of tomato sauce and a pinch of Splenda. Layered it all in a baking dish with mozzarella on top. It's really good.
On the side, is some zucchini spaghetti that I sauteed in olive oil with lots of garlic, some onion powder, and a little seasoned salt (I have one that has no sugar in it).
And this is the result, and I'm delighted to say it's really good!!
