Does anyone know how to make a low-carb pudding? I've found recipes for "Pots du Creme" (or something like that) but haven't tired them so I don't know if they are like pudding - but they sound similar.

I'm especially interested in a chocolate pudding - but vanilla, coconut, caramel/butterscotch, and/or pistachio would be nice too. I guess it'd be like making a custard?

I made a creamy lemon meringue pie filling this weekend and it was good - and a little pudding-like (tho also jello-like due to the content of knox).

Any suggestions? I've been eating low carb for over a year now and I've really been wanting pudding - and marshmallows...but that's a whole different story!

Bonnie,

It's not quite chocolate pudding, but there's a very nice Simple Quick Custard recipe in the Good Carb Family Cookbook on page 179. I've been having it for the past few nights, and it is very easy to fix, and really hits the spot. I was going to top it with whipped cream, but haven't bothered.

It sort of reminds me of a creme brule without the sugar on top. And it's really good too.

What is the recipe I have not the book...dounds deklcious!!!Please forward the recipe for puidding or creme brulee!!!!
