I just tried the mock mash and love it (and I'm not a fan of cauliflower in general)! Can you bake this, instead of using the crockpot? If so, do you know how long to cook for?

| Did you put the cauliflower in the crockpot raw or did you cook it some? I have a pot on now and after two hours the cauliflower is still not done. It will be with more cooking I think. It may be the difference in the crock pot thermostate. Donna |

I made this recipe using 4 cups shredded cauliflower and baked it in a 9x13-inch pan covered with foil at 400F for 45 minutes, then uncovered 15 minutes more to brown the cheese on top.
I also add minced, sauteed mushrooms. |

I followed the shredded version yesterday. There is no way that this tasted any thing like cauliflower. It truly was like a hash brown casserole. It was great. I doubled the recipe and baked in a deep casserole. It needed more time to get done. It was good, but the cauliflower was still crunchy. After re-baking what was left today it was perfect. Trust me, you wont go wrong with this dish! |

I made this for the first time last night! WOW, is it YUMMY!!!
I used a bag of frozen cauliflower that I microwaved until just thawed, used half & half (reducing the amount slightly) and added parsley flakes and just a touch of paprika to the mix, used sharp cheddar cheese, and baked it in the oven.... OMG! It was delish!!
Next time, I'm going to try topping it with a light layer of crushed pork rinds to give it that little crunch, like my favorite potato casserole recipe!
Definitely a keeper... my husband devoured it!  _________________

| I had baked a chicken breast stuffed w/broccoli (sp) and cheese, and fixed some of the cole slaw, and wanted something else to round out the meal. I found this recipe, and decided to fix it, but didn't want to wait two hours or so for it to cook, so I mixed every thing up (forgot to put the cream chesse in YIKES!), and used frozen caulifl. and nuked it for about 10 mins, stirred it real good, and nuked it for another 8 minutes. Talk about YUMMY! If it's any better with the cc in it, I won't be able to stand it! A real comfort food. I had to make myself measure out a cup of it, and then added another small spoonful, and put it up before I ate the whole bowl Thanks so much for all the recipies on this board. I have one of George's books, and hope to get the others as finances allow. You are all a great bunch, and I've learned alot! |

Billie, thank you for the welcome! Such a fantastic website, and SO much to learn. I've done lowcarb in the past, and been successful, but always went back to my "old way". This time I am very dedicated to this woe for the rest of my life. I'm really enjoying it! I feel so proud when I can pass up a "temptation"! (although, I'm struggling with not going to my favorite catfish place for the fried catfish, slaw and hushpuppies. I've been twice with my sil, and it has caused a temporary gain both times) I bought some catfish fillets at walmart, and am going to use George's breading for chicken to make them. What can I do about the hushpuppies??????? (I know, without!)
Where in Arkansas are you from? When did you move away? |

Carol, I've thought about breading catfish with George's sesame "breading" he used on Salmon in the new book. Sounds better to me for it than the "flour" breading. But that's me, might not be for you. I personally have gotten to where I don't care for catfish (or fish in general) anymore. Guess I still like catfish better than a lot of other fish tho. Used to really like fish, but my taste changed for it several years ago. And that is too bad, since fish is so good for us. (My husband nor I either one care for Salmon at all. So I doubt I'll ever make the salmon. If he liked it, I might give it a try sometime, but he probably likes it less than me. He does love catfish tho.)
Sorry I'm still working on cornbread & hush puppies. Seems like I made a reasonable sub for it once several years ago, but I didn't get it written down, and I can't remember what I used. Sorry!!! I've learned (and heard a lot of others say), that you should actually wait awhile before trying extreme subs. Give your taste buds & memories time to kinda forget what the "real" thing tasted like. Then you don't notice the difference as much.
Some have used a little soy grits in "bread batter" to give it the cornmeal type texture. Also some have found that hazelnut meal/flour is a fairly reasonable sub to make "cornbread" (& so maybe hush puppies). I don't care for hazelnuts, and haven't tried it. My DIL did make a bread using some hazelnut flour once a few years ago. But maybe that isn't a good example, cause I really don't remember too much about it. But it might very well be something to try. _________________ Billie

I just love those new crock pot cooking bags.. No more mess to clean up.. Just throw the bag away.. I ve even used it in a dutch oven.. I highly recomened them.  _________________
