I did this recipe last week but added protein powder (add it to all my baking to up the protein). I made them in silicone muffin cups and they came out really well. I might have put a bit more splenda in it (usually don't measure but throw it in "freestyle". Think I skimped on the Splenda too much though!). Nevertheless, very good recipe.

Can I use something other than Splenda? I don't use fake sugars, so I would use Stevia, Honey, Agave or nothing.

I used the smart balance natural peanut butter-- really good in this recipe!! Thanks so much for the quick and easy breakfast.

I wonder if you could just make this in a pie plate and have a cheesecake instead of the muffins.... then just slice and serve?

I made these yesterday. They are very good with a spoon of sugar free jelly on the side. More of a cheesecake than a muffin though.

I am going to try substituting some key lime juice for the peanut butter to make a key lime cheese cake. Has anyone tried doing something like this yet?

These are good!!! And yes I have instead of PB,i`ve put the juice of half a lemon & some lemon zest.And I also have a recipe on here for chocolate ones that I make w/ cocoa.

Linda, YOu could certainly try it. It would boost the fiber, but I'm not sure if you'd like the texture you got, unless you made it into a "crust".
Personally I'd rather boost the fiber in this recipe by adding Chia. But chia isn't always easy to find with ordering online, and is a lot more expensive.
I usually order mine thru Amazon. I've been told that Whole Foods usually carries it too.
Oh, and something else you could add, and it probably wouldn't even be noticed is Inulin (I believe Fiber One is Inulin, but check. I know it is one of those type products.

I do add flax meal to a lot of recipes to boost fiber & Omegas.
