Hey Guys, I should probably post this in the recipe section, but I can't figure out where to put it. This is a recipe from my husband's dietician that really fits into our lifestyle. Try it, I think you'll like it...
Mo Betta Butta
3 cubes (1 cup) Butter, softened
1 cup EXTRA LIGHT Olive Oil
(3/4 cup Canola oil can be used in place of olive oil)
Mix together in a storage container with electric mixer until smooth. The mixture will be semi-liquid. Cover and store in the refrigerator. Makes 2 cups Use like butter or soft tub margarine.
Bennefits of Mo Betta Butta
High in Omega 9 fat (monounsaturated olive oil)
Half the saturated fat & cholesterol of regular butter
No hydrogenated, partially hydrogenated, or TRANS fats
Very low in Omega 6 fat (proInflammatory)
Half the sodium of butter or margarine.
If possible buy butter made from Grass-Fed Cows.

I made a recipe similar to this the other day. (Got mine from Jennifer Eloff)
I moved it to the Miscellaneous Recipe section, but left a "shadow" here in the General Discussion section. So if you look "here" for it, you will also find it. _________________ Billie

Hey thanks for moving this into the recipe section...as much as I've gone over this site, I've never seen the miscellaneous forum...boy do I feel dumb.

You're welcome! Don't feel dumb, or alone Mary. Many (maybe even most) people find new sections all the time!
We have stickies at the top of the first page of many of the sections or forums which address many questions, yet people fail to see them.

The one I usually make is from Jennifer Eloff
It is very similar, as I said above. But sometimes I use melted coconut oil as part of my oils.
HEALTHY BUTTER
This is a clever way to make butter healthier and higher in monounsaturated fats. The taste is just like butter, plus it spreads easily straight from the refrigerator.
1 lb butter (4 sticks), softened
1 1/2 to 2 cups light-tasting olive oil* (see Helpful Hints below)
In blender, process butter and olive oil until soft, creamy and smooth. Turn out (using a soft spatula) into plastic container with lid and refrigerate until set.
Yield: 3 cups, 1 tsp per serving, 42.5 calories, 0.0 g pro, 4.8 g fat, 0.0 g carbs
*Helpful Hints: I usually double this recipe as it lasts long in the refrigerator. Choose an olive oil that has no perceptible taste (the green one is stronger tasting), so that it doesn't overpower the taste of the butter. If per chance the olive oil overpowers the butter taste, then use that Healthy Butter for frying and cooking. Now here is the thing: It really depends on your butter, however, the brand that I use now requires 4 sticks of butter and two cups of olive oil. A little bit of trial and error will find your perfect Healthy Butter Recipe! My family will not do without it! _________________ Billie
