beautiful outside today! had my windows open till just a bit ago, cause the sun hit my back windows and started heating me up a bit. got steaks ready to go on the grill and waldorf cole slaw in the fridge.
spent the morning cooking up a ton of bacon in the oven since it was cool today. got lotsa grab and go stuff now! and homemade bacon bits.
then I went to Fred's and bought me a new toy!!! a really cool retro vinyl record player that burns CD's!!!! and plays cassettes and has a really good sound! Freds is going out of business so they had them marked down to $100! bought a small tv stand to put it on and put it together all by myself!! yay me! Also figured out finally how to get the propane tank on the gas grill all by myself! I am becoming an independent woman whether i want to or not! LOL

yay!!! I am woman!!!!! hear me ROAR!!! LOL!! How are you today Flo? what did you do, and what did you serve yourself that was yummy? Got burger meat thawing and some ribs ready for tomorrow. Steak was overly yummy, and the cole slaw is ALWAYS to die for! _________________ Dingie Dinah

well.. I made a Shake and Bake chicken tenders that were WONDERFUL.. got a idea from breading idea of the parm cheese and used 1/2 and 1/2 w almond flour.. and seasoning and baked it.. in a hot oven.. came out great.and NO MESS FROM FRYING..... spagehetti squash w sm amt of sauce..
--------I need to figure out what seasoning to add to make it taste like the Regular BBQ shake and bake that I like so much..... thinking it must be smoked paprika and cumin and some splenda. ?????????
Menu items for today are.. going to be Heat up the smoker and let 'er rip.. Smoked Chicken and Ribs and smoked corn on the cob
sides : coleslaw and moc potato salad.. and fresh green beans sauted w bacon.
Fresh veggie/fruit platter w appropriate dip and baking a sm pan of corn bread for the guests.
Made the Georges Peanut Butter pie for me and who ever wants some and baked a Marie Callendar Very BErry Pie for the guests w ice cream..
As long as I have something the ice cream/pie doesn't matter..
all set... to stay on plan and eat well at the same time...  _________________

Flo, Here is a recipe I have (Famous Foods program) for Shake & Bake (reg not low carb). It is the regular Shake & Bake also, not the BBQ Shake & Bake. Maybe you can low carb it.
Shake and Bake
4 Cups Flour
2 Tsp. Cayenne Pepper
1 Cup Bran Flake Cereal (crushed)
2 Tbls. Parsley Flakes
2 Tsp. Garlic Powder
1 Tbls. Onion Powder
2 Tsp. Chili Powder
2 Tbls. Taco Seasoning
1 Tsp. Ground Pepper
1 Tsp. Curry Powder
1 Tsp. Basil
1 Tsp. Oregano
Mix together well.
Preheat oven to 400F
Dredge 1 disjointed chicken in above mix.
Melt 1/4 cup butter in a shallow 9 x 12 baking pan.
Place chicken skin side down and baste top with melted butter from the pan. Bake uncovered for 25 min.
Turn skin side up, reduce heat to 350F and bake until tender; 30 - 35 minutes.
I know I have a link or links to sites which copycat recipes too. Not sure where. And it seems like there may be links on the site here somewhere. _________________ Billie

Thanks Billie....
I will look it over and pull out some things to try for sure.
As I am sitting here with my smoker going one of the visiting friends said to me
why dont' you do what it the way you prep chicken etc for the smoker..
which is smear plain yellow mustard over the meat then they dry mix but she suggested I add BBQ sauce to the mustard then dip into the breading..
similar to what we do with any meat we smoke.. so I am going to try it both ways to see which works best..
Nice to have some options to make chicken different each time I do it.
