Hi! I am glad to be back after a long hiatus Smile

I just got a pizelle maker and I am staring at my Protein powders and thinking there must be a way to make a low carb pizelle out of vanilla protein powder, maybe some eggs, anise and sweetener? Has anyone tried this at home?

Pizzelle Cookies

1 1/4 Cup vanilla whey protein powder
3/4 Cup Sugar Substitute (I use Whey Low)
1 teaspoon baking powder
6 Tablespoon melted butter (unsalted)
1 1/2 teaspoon vanilla
2 eggs, slightly beaten

Grab your pizzelle iron and heat that baby up. (Spray it first with cooking
spray). Mix dry ingredients really well so the baking powder blends in. Add
the rest and beat well. Using a melon scooper for uniformity, drop a scoop
onto each cookie form of your pizzelle and keep going. It yielded
about 10 cookies.

I roll these to make Cannoli shells and also form them into waffle cones while they are still soft & warm.

Thank YOU! That was just what I was looking for! Can't wait to try it. This one is much simpler than others I have googled for. And with readily available (in my house ingredients) Very Happy
