I made George's Classic Almond Flour pound cake last night for my hubby's birthday. It's an amazing LC cake, but upon experimenting, I found an even MORE amazing bread!! If it has that great texture for a cake, why not make it savory for bread?!? I call it "corn" bread due to the texture being similar to the real cornbread my grandma used to make.
Almond Flour Jalapeno-Cheddar "Corn" Bread
Ingredients:
· 1/2 cup butter (1 stick) softened at room temperature
· 1/2 cup full fat cream cheese
· 1 TB Splenda
· 5 large eggs, at room temperature
· 2 cups almond flour
· 1 teaspoon baking powder
· 1/2 teaspoon garlic powder
· 4 ounces sharp cheddar cheese, grated
. 2 fresh jalapenos, chopped
Cream butter, cream cheese, Splenda, salt, and garlic powder together, mixing well. Add eggs, one at a time, beating well after each. In a separate bowl, mix almond flour with baking powder. Add egg/butter mixture to flour a little at a time while beating. Add cheese and chopped peppers and stir to combine.
Pour into greased standard loaf pan and bake at 350°F for 40-50 minutes.
Cool 5 minutes before removing from pan, and cut into 12 equal slices for only 2.1 net grams of effective carbohydrate per slice!! (at least according to the nutrition program I used) |

I'm sure you will like it here. Lots of good tips, info, recipes, and support.
Be sure to check out the recipe section. Wonderin about something, check out the search.
It's under Forum on the bar above. Also check out the help from the toolbar, and there is a Help forum also. You'll find a lot of answers there. Because of spam & bad posts being able attack this section, it has been closed to new posts, but it is still there to browse, glean answers from. (No spam there now.) Most problems have been addressed there. There is a sticky of FAQs in the General forum. It has links to lots of as the name says Most Frequently Asked Questions about Stella Style WOL!!!. For that matter be sure to check out all the stickies when you have a question. Good chance it may have been answered in the FAQ's or other stickies.

Billie, thank you for the warm welcome. I'm really enjoying the creativity and challenges that cooking LC is inspiring and providing. I've got a great summer squash recipe I'll be posting soon.
