Hello my friends.

I am so blessed to receive so many well wishes on my journey with SS. It really does feel like a new start, a positive new start.

Mondays are usually hard for me as I get an Avonex, interferon shot, on Sun. nights and usually it knocks me out until Tues. morning, However, I have been having better luck since starting SS. My blood sugars and my high blood pressure and pulse have been doing so much better. I have a long way to go and I will see it through.

I admit I "slipped" yesterday, not huge but Immediately I knew I had faltered a little but went right back on track the next meal and that felt good. I did not belittle myself as in the past.

I am making George's sausage soup which is so filling and good. we are having it with a small side salad. House smells wonderful.

Hey, if we continued to eat sugar those small "slips" would become huge. That is one of the things I love about low carb. If I do slip, I just don't feel as guilty and I return to low carb next meal...usually.

Weekends are hardest because I want to snack. Lately, when I splurge or binge it is on low carb junk. Friday night I hate six, yes I said six Carbsmart ice cream bars. It really hurt my tummy. Saturday morning I woke up and had a good healthy breakfast.

Ice cream of any kind seems to be my downfall.

Monday - Monday .... so far so good, here. Marylyn - proud of you for "shaking it off and getting back on program!" We can be our own worst enemy by berating ourselves and that can defeat the progress we have made.

I've discovered a snack that I just can't get enough of ... and its cauliflower so I can nosh on it all I want. I take 2 heads (that is what fits on my large cookie sheet), wash it and cut it up. Spray the pan with butter spray, lay all the pieces on the pan, add maybe a fourth cup of water, spray the cauliflower with butter spray and sprinkle on 'basil & garlic' seasoning. Then cover with foil and bake - I don't time it but I need to - maybe 20 - 30 minutes until it is tender but not overcooked. Then I remove the cover and bake another (??) 15 to 20 minutes, maybe until it just starts to brown. I think the oven is about 325 degrees. Then I pack it in plastic storage containers and put it in the fridge. I love it cold - or heated up. If I remember correctly, George has a similar recipe. My Stella cookbook collection is still in a box somewhere until I can find a place with room enough to put things out.

Another thing that is a recent discovery is Blue Hake fish. Schwans has it and I love it!! So flaky & easy to cook any way you like.

You are right, Marylyn - it does feel good to be back! Cheryle - good to see you, too! I'm looking forward to being a Stella Styler again!!

Grats for Monday:
One of my meds is cheaper since I'm on Medicare & have a good supplement - about $120 cheaper!

My remote controlled fan - so wonderful to be able to turn it on and off from my lift chair!

Netflix! Since I'm practically housebound, watching movies on the computer helps keep me from going stir crazy! (Maybe not from going crazy - but not stir-crazy hehehe)

Cheryle, I cannot have any type of ice cream in the house because I would eat a whole half gallon between morning and night. I was proud of myself that I got back on track the next meal and that has never happened to me before SS. I still need to watch portion control even on SS food. Confused

Joyce, I am so happy you have come back here too! I have been eating roasted cauliflower since George showed how to on TV...it is one of my favorite go to's also. Very Happy I have never heard of Blue Hake fish and I've never ordered Schwan's foods before. Is it expensive? Nice on the cheaper meds, they are our most expensive budget item. Even with just paying co-pays. Crying or Very sad Netflix and a remote controlled fan, sounds wonderful. Tell Sonny I said Hi.

It really is a warm fuzzy feeling to look on SS and see responses again. It helps tremendously....really.

Welllll He woooo girls! :DIt is good to see ya back! I have been a little scarce except in the early mornings on Facebook as I have had school yesterday, today and tomorrow all day off to study with the big electrical test on Thursday. I am a little nervous to be honest because this is the state electrical test and a doozy. It is way bigger than the fireboss test that took me 2 tries to pass. Anyhoos, still on track, eating well and like MaryLyn and Joyce have said, it is good to see my friends here again and we all offering each other support! I do pretty good once on track as far as not cheating but like all things in my life, when I do something I do it large including falling off the wagon so I am not eating any of the legal sweets at all and I have already seen 13 pounds slide off. Hopefully in no time at all. I will be back where I was. Good to see y'all again and lets all stay put! Take care and sending love hugs and congrats cause I know we ALL are going to make it,

David, I wish you the very best on your test. I commend you for even trying it as it sounds frightful. I am also not doing any treats for now and surprisingly, it's been fine. I know how hard you are pressed for time these days so I am happy you were able to post today.

MaryLyn, Thank you! It is indeed a formidable test and it has me nervous! Even now when I should be studying I am on the internet. My brains way of coping with the fear of tomorrow's test! I have been spread thin with breeching the seals on mine rescue, rescue competition after that, the electricians test tomorrow, competition again Friday, work Saturday and Sunday and then Monday through Friday of next week I shall be gone for Mine Rescue competition in Cove Lake Tennessee. So I am thinking in about 2 weeks things will settle down. I will let you know how the test goes Friday! Y'all take care and eat well, we deserve it,

David, I got tired after reading about all your activities! You certainly have got a lot on your plate. Do you ever eat out of frustration or being so so busy? Then if you do, do you eat "legal things?"

I find it is the hardest for me when I am overwhelmed with the pain. So far so good, first I drink a huge glass of water and wait 5 min and if I truly hungry I will eat a little protein such as cold chicken, eggs, jerky and that seems ok for me. Before I started back i would immediately go for the ice cream or some other sweet.

I wish everyone a great day and if you are struggling, come and talk about it here.
