pizza stuffed eggplant

i was craving pizza today and wanted to try stuffing an eggplant, and this is what i came up with! it was VERY good! I will definitely be doing this again.



Pizza stuffed eggplant

2 med sized egg plants
1 lb sausage (Italian would be best)
1 bell pepper
1 cup sliced mushrooms
˝ diced onion
˝ cup black olives diced
2 cloves garlic minced
1 tblsp Italian seasoning
1 15 oz can tomato sauce
2 cups mozzarella cheese
Note: reserve some of the olives peppers mushrooms onions to top it with, like a pizza

Cut the end of the eggplant, carefully slice in half. Use a paring knife and take out the meat leaving ˝ inch of eggplant. Salt them and put them cut side down in a 9 x 11 pan and heat in the oven about 25 minutes to partially cook and render out some of the liquid. Dice up the meat you took out, salt it and put in a colander to drain while the eggplant is in the oven.
Meanwhile brown the sausage with the onion and garlic. Add the bell pepper when it’s almost browned. Add the mushrooms and olives and the can of tomato sauce. (you could use a jar of LC pizza sauce and adjust the seasonings. Add the rinsed eggplant dices and the spices. Cook this for about 15 minutes.
When you take the prebaked eggplant skins out of the oven, let them cool a bit and then rinse them to get rid of the excess salt and pat them dry with a paper towel. Place back in the 9 x 11 pan after slicing a thin strip off the bottom so they don’t fall over.
Put one cup of the shredded mozzarella in the sauce and stir to melt. Stuff the eggplant with the mixture. Top with the rest of the cheese and the reserved pizza toppings. I have pizza spice grinder that I put over all of it. Bake for 30-40 minutes at 350 degrees……

it really was good MaryLyn! I will def be doing this again. I've only really started experimenting with Eggplant this summer because my wonderful little farmers market right down the street have them for $1 each. much cheaper and fresher than in the grocery stores. been fun experimenting! that's what this recipe was. I saw on another site, a stuffed eggplant, but the author couln't remember how they made it ( it was a picture only) so I woke up craving pizza and said....hhmmmmm lets give it a try! it was a hit! I think this might be one of the only recipes I've ever made up myself! will keep working on it! love you toots....

Really, eggplant and pizza are two of my very favorite foods. Tomorrow I am going to buy eggplant and I have some fresh mozzarella to use up, perfect. Good job coming up with this one!
