Creamy Spaghetti Squash

Hey Gang,

I invented this one night when I craving anything w/ an Alfredo sauce. Now my fiance request this everytime I go shopping. He actually named this recipe Jumanji after the movie (He says it's a mouthful of excitement in every bite).

2lb Sp. Squash (sliced into two and seeded)
Olive Oil
8 - 12oz Parm. Cheese shredded
1 med. Zucchini diced or 2 cups chopped Broccoli
8 - 16oz Cooked Smoked Ham diced
1 cup Heavy Cream or more if you like
1 sm jar of Pimentos drained or Sundried tomatoes in oil chopped (I perfer the SD Tomatoes)
1 Leek diced or use 1 med Onion
8oz of sliced Mushrooms (optional)
Garlic/Salt/Pepper to taste

Preheat oven to 400 degrees.

Rub the cut side of the squashes with olive oil and place cut side down on a baking sheet pan. Cook for about 1 to 1 1/4 hours until soft and carmeled on the bottom. Cool squash so you can handle them and then take a fork and shred into strands into a bowl. Set aside.

On the stove top take a stock pock or deep pan, add some olive oil to pan, add leek & shrooms & zukes or broccoli. Cook until just tender. Add Ham, pimentos or sd tomatoes to heat through and then add cream, cheese, and spices. Reduce until thick and creamy. Add Squash and cook until heated through. Plate and then add a touch more or the shredded Parm (you can never have enough Parm!!). Enjoy!!

It is!!!! But I forgot to mention be prepared for some left overs as it makes a huge batch. I don't mind the left overs as they never stay around long thanks to our friends (the Hoovers I lovingly call them). Funny they seem to know when I'm making this and promptly make their appearance. Very Happy

Hi Dinah,

I created this recipe, but my friend crashed my computer. And I couldn't remember all of the ingredients and/or what amounts to put in the recipe. Especially since I only make it in the winter. It is sooooooo good!!!! I'm making it this weekend too.

I was having a terrible time finding it with all of the glitches here on the site. But it was worth being patient for!!!

Oh by the way I'm swtred, but I wanted a change. So now I'm rotnkat.
