Hey everyone! I am Krista and I used to hang around here a good bit in 2009. I was low carbin' and loving it - and then during a particularly stressful move from Michigan to Mississippi, I fell off the bandwagon. In 2010 I was diagnosed with Celiac Disease and have been gluten free ever since. After going gluten free, I gained weight (my body was no longer malnourished. Yay!) and ended up at 262. I lost 75 lbs with a lower carb, real foods version of Weight Watchers and it suddenly stopped working for me.
Around the same time, I started to be honest with myself and admit that I have always had a problem with things like brown rice, oatmeal, sugar, etc. I decided to eliminate these things from my diet, and since I never stopped using George's cookbooks (good food is good food, and George knows good food!), I knew right where to go. So here I am. Again. _________________ Krista

welcome back Krista!!! Like you, I kinda fell off the wagon due to stress and life in general. Like you, my entire world has changed in the last few years.
BUT I'm back and better than ever!!!! (well, at least when I heal from my botched up surgery. LOL)
I always feel so much better when I live low carb. Now that I'm living alone its kinda hard to cook for one, but I'm adjusting. now that I'm not feeding a family, I can afford better cuts of meat, etc. That part is kinda nice.
Glad you are back, and hope to hear more from you.

Dinah - Oh no! Botched surgery sounds horrible. I hope you are ok now!
I always feel better living low carb, too. I don't know why I stopped. I really think that I have a sugar/carb addiction. I guess it is something that I am going to have to work on for the rest of my life.
You will hear a lot from me. I have a big mouth. lol

Hi hippychick~~~ I'm new here and still trying to figure out how to use the site. You sound revved and ready to get on with it. It seems just when we think we get what we need finally figured out, something turns our worlds upside down, or rattles our cages, and then our needs change again and we're back to trying to figure it out. Hi Sandi!
You are going to love it here. Everyone is so helpful and there is a ton of great information already on the board. If you get a chance, poke around and check it out.
You are so right - things can be going along perfectly but one little thing can throw me completely off track. I guess the difference between someone who is successful and someone who isn't is that the successful person picks themselves back up and climbs back on the wagon. I need to learn to be a better climber and not be content with being drug along behind the wagon speeding down the wrong road! _________________ Krista

Thank you Hippychick. YOU are going to be right back on that wagon instead of trailing now. It's a NEW day and you have a NEW resolve set. I'm an emotional eater as many are, and THAT is my target to repair... finding a way to be AWARE when in the midst of some crisis and STILL manage to keep perspective until through it. Can you relate?
It's funny how MUCH time I've had to poke around here because it took me days to figure how to post at all, but finally spotted the note by Billie about logging off one page before logging onto the other. Now, she's figured a way to have 2 windows open at the same time through 2 dif search engines ( I'm using IE and Google chrome to do it). The files are really helpful! It just seems the posts, on the whole, most recently were in January. Some of the most interesting discussions were in '05. I go back and read on the old SSizing boards too. The discussions bounced all over.. even to kitchen gadgets and collections. I'm finding the same kind of fun here in the threads.
I've yet to read success stories here, but am thoroughly enjoying reading the 2 bks I just got in of George's and can see how my days could EASILY be all eaten up by hanging in with all things STELLA STYLE! LOL It's fun to read the recipes both on the forum and in the bks. I've followed George's tip to click the Food Network logo on the Home page ( bottom) to acces 100 of his recipes, and been tickled to read the new recipes or re-vamped ones from the NEWest bk, up in the recipe section under Stella Recipes. Today I'm trying to remember where I saw Geo's recipe for chocolate bark to use on strawberries and dark cherries ( the latter for only hubby). I have unsweet Baker's choc waiting for me. It may be to melt the choc in a dbl boiler, add cream, remove from heat and add sweertener and sf vanilla, but I'm not sure and don't want to fudge it ( no pun intended).
My hair is washed, the kitty fountain cleaned, the Valentine's are stacked on the table by my bouquet-surprise delivered yesterday ...steak marinating for the grill tonight.... laundry waiting to be completed and fruit to dip! My day in a nut shell....or a heart box, if you will. DH's Valentines include a pouring pot and thermometer for his candle making hobby and some forbidden treats ( small box of maybe 6, so I won't be tempted) ...and my 2 Stella bks were my Valentine!( color me HaPpY) Oh! and 4 chair cushions for the dining table from Williams and Sonoma's sale list/ free S & H, for BOTH of us. ( Our USUAL mode is *practical* gifting, but since the kids are up and out~~~ sometimes *JUST for FUN* reigns). I used to lay out red and pink paper foot prints leading up the stairs for the kids and over to the piano or fire place for their gifts at Easter and Valentine's Day and DD suggested I do that for her Dad too today. If THAT happens...it will be the LAST thing I get to making today. LOL ( good to know she remembers the small details though).
So.... what is your menu looking like this week? Anyone? I'm trying to eat more green and sometimes get on a kick of ONE food I have to have almost daily over 2 weeks. Sometimes it's cabbage..other times either broccoli or brussel sprouts. Last week someone mentioned using avocado instead of mayo ( his wife dislikes the mayo) and then whatever you want in tuna salad and then they stuff the mixture in small red and yellow peppers of some kind and broil to lightly brown on top. I have one avocado and may try at least the salad mixture today... but have no peppers now. ( I wonder if zuke boats would work for that?) I personally LIKE mayo and would add some probably... the idea of tuna with avocado sounded interesting. but then. I like avocado just about any ol' time. IS that something most low carbers avoid? And what about sweet potatoes? I have missed these 2 things the past 8 yrs while Somersizing. It now seems they are both ok on several WOES.... healthy and worth the wait. I miss carrots and bananas but can do without them.
Can you tell me your usual routine when coming to the forum, Hippychick?
Log in on one or both places...then.... You check for mail? adjust profile? ...and..... I don't want to miss anything I should be seeing or doing. sandi |

I had all kinds of problems figuring out why I couldn't post. too. I finally figured out that I had to look at the top of the board and make sure it said View posts since last visit, View your posts, and View unanswered posts instead of telling me that I was NOT logged in. I spent some time poking around and refamiliarizing myself with the site and info in that time, too.
My honey works in the restaurant business (was a Chef, now a restaurant manager) so he is working all day today. We will celebrate Valentine's Day on his next day off. I also am getting two of George's books for Valentine's Day - I have Livin' Low Carb: Family Recipes Stella Style and Eating Stella Style: Low-Carb Recipes for Healthy Living and love, love, love them! Even when I am so far off the low carb bandwagon that I can no longer see it, I use his recipes.
My menu for the week is looking pretty good. I am going grocery shopping tomorrow, so I will post my menu plan then. A few weeks ago, DH and I did a big batch cooking session - 21 main courses in just a few hours. I will post that with recipes in a new thread.
I tend to pick a food and eat a lot of it for a while and then get sick of it and don;t eat it again for a while. I don't like avocado, so I avoid them. Sweet potatoes are a trigger food for me, so I avoid them like the plague. Once (if?) I a past the point of my triggers sending me in to a 3 day carb binge, I will reintroduce them, but until then, they are a big no-no for me.
I usually just log in and check the links at the top right of the board (the View posts since last visit, View your posts, and View unanswered posts links) and then check to see if there is anything else I have missed.

Thank you Krista.... and for the nice welcome, Debbie. I love the tips of what to watch for when coming on,and I did find the list and recipes of the marathon meal preps as well as Rae's own Git-It-DONE spree.
I actually signed uop on this forum about a yr or so ago and never could figure out how to post so never did.. just lost interest and went back to the familiar SSizing forum. This time, I was determined to hang in there and find out what was what. Hahaha I'd forgotten I'd signed up before and when setting my password and using my e-mail.,.it said those were used already. LOL wow... how did I manage to squeeze THAT detail out of my memory? Anyway, I got that straight and changed my password to get going again. Then the confusion of log in here/ log off there and back in here, had me going in circles until Billie made all clear ( THANK YOU AGAIN Billie!!HUGZ) I had PLENTY of prowling time.. reading recipes and posts on various topics. It's been fun, and looking over the new bks too. I think I'll take those down with me while I work on laundry.
I honestly am bad about NOT following any recipe. I enjoy looking and reading but ultimately when short of time, just make up things as I go along. If I get inspiration somewhere, it's welcome ! I enjoy seeing which herbs and spices go together and have tumeric and the flower stamens stuff... what's it called? OH! Saffron!This was given to me by a neighbor and she bought it in Ir*an. It's quite pricey here in the stores, but good for us health-wise. I'd like to find new ways to incorporate these into dishes. I add cayenne into savory when possible and then cinnamon in sweeter things for the same reason. They boost metab too! The neighbor's son often shops in a neighbiring big city for his authentic Ira*nia*n foods for the week and I've sampled some of them. The lamb had cinnamon and it just didn't seem like a good combo to me...but I'm not used to lamb OR that culture's foods. The funky white rice cooking method, I STILL use because it makes what they call Tad*ique on the bottom..a crusty layer of buttery goodness that tastes similar to popped corn. I would jump on that if I could, but only make it for hubby now. They also use lime ( whole lime in a dish) ... well, let it suffice to say... I'm pretty much stuck in my Amercan ways.They said the kids there will fight over who gets the tadique. Understandable after tasting it! LOL The Mother had just gotten her citizenship here, but is now back with her DR hubby in Ira*n and the adult son is a professor in the univ here. Nice ppl ...just a challenge to communicate with the mom who was eager to teach me her cooking ways and even things like plucking eye brows using thread....interestiing. She's suffered injury in the past with an attack on her home town many yrs ago when Sad* aam * H sent mortar shells and troops. Hearing things such as this, makes every single thing seem different ...much more important..even the how to's over a simple meal prep. God Bless America and our Freedoms!
