Donna, been a long time since I made these, but if I remember correctly, yes, I kept them in the fridge once the set on the counter an hour or so.

But you know what you could do? Instead of making them "cookies" put them in a flat, squarish plastic container, and eat it with a fork. I bet that would work, without having to fridge them.

Christina, I'm not Dinah, but I would say yes. You might want to sub some of the almond flour out for flax meal. I Personally would not put the whole flax seed in. (I never use whole flax seeds.) Flax seed if you don't get them chewed well, will pass right thru your system, and be of no value. Plus if you have some digestive problems, they might be a problem. (but thats me!)
I realize that the seeds were probably put in as much for the crunch or chew as the nutritional value. I kind of like to add a few sesame seeds to these types of recipes. But again that is my tastes & likes.

As I said, I think I'd sub some of the almond meal. I would not sub it all, especially if you are feeding to someone else who may not be used to eating flax. It might be too much fiber. I could handle it, someone else might not be able to. But then you also need to be sure they are not allergic to almonds. === Just a thought.

My husband and I made these over the weekend and loved them. Kids thought they were yummy too! I used splenda and I did use milled flax instead of the seed-----for those of you who were wonderering----it came out great. Also---my coconut hating husband didn't have a clue there was coconut in them---I did the dry ingredients! Its more for texture in my opinion, there is not alot of coconut flavor. These really hit the mark for my---I was craving something like no-bake cookies. Thanks to the author of the recipe!!

Did anyone establish what was causing the oil to leak out of dinah's cookies ( mentioned on page 1)? That didn't sound appetizing at all and I would love to know how to avoid this when making these. sandi

Whey Low discussion on page 1, also caught my eye. I LOVE the flavor of Whey Low products and the fact that they are natural, The Whey Low Gold is JUST like brown sugar in flavor, texture, and looks. We use Whey Low D ( even LOWER glycemic response than regular Whey Low pourable, but we also buy the regular Whey Low . Just wanted to say my experience in using Whey low in CHILLED creamy things such as whipped cream, it is a good idea to use a slight amt of warm water or warmed cream to dissolve the WheyLlow granular OR powdered BEFORE adding. Otherwise it takes about 2 days to dissolve in the whipped cream in the fridge ...giving a gritty feel in the mouth/ on your teeth. That was my ONE tip for anyone purchasing Whey Low Granular or Powdered. The flavor is great, but they need to be dissolved in something warm for a smooth texture in cold things.

i have not made these in a really long time, but I have an idea... I've just started using coconut oil. I'm wondering if you sub coconut oil for the butter, it would not render out the oil.... I'll try it this weekend if I remember, and report in....
