Happy Father's Day! ....So what's on the menu?

We be havin' bacon and eggs and then it's grill time!

Pork Souvlaki on the grill with Easy Tsaziki (sp?) sauce or cucumber and sour cream (Rachel uses Greek Yogurt but too many carbs for me)

We simply cut boneless pork loin (fatty end) into big chunks and then marinate them in olive oil and (fresh from our garden) oregano (may use dry) and salt and pepper and chopped garlic.

Then I put 2 to 3 pieces on a thick skewer and grill them separately from the peppers(garden), eggplant(garden), red onions and Tomatillas(from our garden also)

I need coffee!!! Have a wonderful Family Filled Day!

Nothing special here today (going on or meal). We are just trying to get thru. I am here helping take care of my ill Father-in-law, who is not doing at all well. Really won't do any special meal for him, as nothing tastes good to him, and it is hard to just get him to eat. Even his old time favorites he doesn't like. It's sad! (Prayers for him & us - my MIL & myself - would be appreciated!)

Nonetheless, am wishing all you Dads a Great day!!!!
