This is a recipe I got over 20 yrs ago and suddenly remembered it the other day and thought it could be LC. I made it crustless. I love it. It does not have a strong tuna taste. One of my co-workers tried it and commented that she had expected a strong tuna taste but was surprised it did not. I used less olives because I only had about a 1/4c. It could be salty to some when using the full amount. So for those who don't care for green olives you might want to cut the amount back. I could not even taste them when I used the lesser amount. Hope you get to try it and like it.
Tuna Quiche
Ingredients:
deep dish pie shell (if you want one)
1c. grated cheese (sharp)
2 small onions (sliced)
1 c. cream
1/2 c. chopped green olives
1/4 c. almond flour (or you could use ground flaxseed)
3 eggs well beaten
1/2 c. butter
1 7 1/2 oz. can tuna (drained)
Mix cream & almond flour. Add eggs & melted butter. Place 1/2 of cheese on the bottom of the pie plate. Sprinkle 1/2 tuna over cheese, 1/2 of onion, 1/2 on olives in layers. Repeat. Pour liquid mix over all of it. Bake 350 degrees for 35 min. until center is firm. Set for 15 min. Can be frozen.
