I came up with this recipe tonight. I was in the mood for a turkey burger, and thought it would work well with cilantro/avocado/jalepeno type flavors.
It came out FANTASTIC, so thought I'd share. I'm pretty wimpy when it comes to hot stuff, but you could certainly upgrade to a hotter pepper.
Cilantro Turkey Burgers with Tomato Avocado Salsa (makes 3)
Burgers:
1 lb 93% lean ground turkey
1 teaspoon Adobo seasoning
½ teaspoon garlic powder
½ teaspoon chili powder
¼ teaspoon ground pepper
¼ cup finely chopped fresh cilantro
1 whole fresh jalapeño, seeded and finely chopped
¼ cup red onion, finely chopped
½ cup grated four cheese Mexican blend
Mix well; form into 3 patties. Pan fry on a nonstick pan in a little olive oil until cooked through. (Nonstick is advisable because the cheese may make the burger stick to the pan)
Tomato Avocado Salsa:
½ cup diced grape or cherry tomatoes
1 avocado, diced
Juice of 1 lime
2 tablespoons finely chopped fresh cilantro
½ fresh jalapeño, seeded and finely chopped (all if you like spicy)
2 tablespoons red onion, finely chopped
2 tablespoons extra virgin olive oil
1 clove garlic, minced
Salt & pepper to taste
Toss together, making sure that the avocado is well coated in the lime juice. Let sit for about half an hour for the flavors to blend.
Serve over burgers. |
