Has anyone made potato salad using cauliflower? My question is how long would you steam the cauliflower in the microwave to make it soft enough to double as a potato, but not fall apart? _________________

That depends on several factors. Fresh sometimes takes longer than frozen. The amount of cauliflower you are cooking will vary the time. How finely it is cut will affect the outcome too. Plus, microwave ovens themselves have varying wattages and such. A good starting place would be to steam it with 1/4 cup of water, and cook on high for three minutes. Then let it rest for two minutes, because it will continue to cook a bit. Mushy cauliflower does not make the most appealing salad. If it is still too hard, go ahead and cook it a bit more, remembering to aim for slightly underdone for the texture you want.
I usually steam mine on the stove so I can test it while it is cooking. Hope that helps. I have heard that cauliflower steams beautifully in the microwave oven with the head left intact, but I have never tried that one.

I made it and just cooked it a bit at at time until I thought it was the right texture, to me it was still a bit too undercooked, but it tasted great and solved the problem I was having with potato salad for Easter
